Today is Pepper Pot Day which celebrates a thick spicy soup first created on December 29th in 1777 during the Revolutionary War. The Continental Army experienced an exceptionally harsh winter in Valley Forge. The soldiers were low on food because the farmers in the area had sold all their supplies to the British Army for cash rather than the weak currency that the Continental soldiers could offer.
Christopher Ludwick,the baker general of the Continental Army gathered whatever he could find to feed the frail soldiers.. The chef was able to find scraps of tripe, meat and peppercorn. He mixed the ingredients together with some other seasonings and the spicy combination we now know as pepper pot became the soup that won the war.
To celebrate today, try making your own pepper pot soup. Its the perfect way to warm up a chilly December day.

After coffee and donuts with DS#6 yesterday we also went out to lunch with his family. It was a dark and cloudy day so it was nice to have company and get out for lunch too. Otherwise I’d probably slept the day away.
I’ve never made Pepperpot soup before, but I do love soup when the weather turns chilly.
This is Wednesday and my day to make up my menu for next week in order to make my up my shopping list for this week.
Next week’s menu is:
Monday - Cabbage Roll Casserole
Wednesday - Chicken Pesto Meatballs
Friday - Apricot Crab Stuffed Acorn Squash
Weekend - Turkey Marsala
On the menu for today is another insta pot recipe and I’m making
Pork Ribs
Makes 8 servings
1 cup water
2 Tbsp. cider vinegar
1 Tbsp. soy sauce
4 lbs ribs, cut into serving size portions
2 Tbsp. Mesquite seasoning
3/4 cup barbecue sauce, divided
Combine water, vinegar and soy sauce in an insta pot. Rub ribs with the mesquite seasoning; add to the pot. Lock lid; close pressure release valve. Adjust to cook on high for 35 minutes. Let pressure naturally release for 10 minutes, then quck release any remaining pressure.
Remove ribs to a foil lined baking sheet. Preheat broiler. Brush with half the barbecue sauce. Broil 4 to 6 inches from the heat until glazed. Brush with remaining barbeque sauce.
I’ll be having these ribs with some coleslaw and baked sweet potatoes today. They will be extra tender and melt in your mouth.
I made my own Meßquite seasoning for this recipe as I didn’t have any on hand.
Mesquiste Seasoning
1 1/2 Tbsp paprika
1 tsp cumin
1 tsp brown sugar
1/3 tsp garlic powder
1/2 tsp onion flakes
1/2 tsp rosemary
1/2 tsp. marjoram
1/4 tsp sage
1/4 tsp ground mustard seed
1/4 tsp chipoltle powder
Mix all the ingredients in a bowl. Spice mixture will keep 2 to 3 months in an air tight jar in the pantry.
I won’t be doing my shopping today because I’m going to lunch with DD and have an appointment to get my hair cut, so I’ll be shopping tomorrow.

Hot soup on a cold day is wonderful!
Clever, your making your own mesquite sauce. Having lived in West Texas for years, I fell in love with the flavor mesquite wood added to BBQ.
I'd never heard of Pepper Pot soup until Tom mentioned it a few months ago. Come to find out Campbell's discontinued it; then when I read the recipe on line totally lost interest. Please let me know if you decide to make it!
