Today is National Cookie day which honors the bakers everywhere that are making Christmas cookies.
The English word cookie is derived from the Dutch word, koekje, which means little cake. Dutch bakers used to test small amounts of batter so they would not waste the entire cake mix if the temperature wasn’t right. It wasn’t long before they discovered the tiny pieces of cooked batter were actually quite tasty.
Cookies come in different shapes, flavors, and sizes. To celebrate today, make a few batches of your favorites.

I haven’t started my Christmas baking yet, but plan to do so soon. I always keep some cookies on hand for a quick snack, but they are usually the store bought kind. I will be celebrating today with a cookie or two.
This is my day to make something to eat for the weekend and on the menu is;
Crispy Chicken Schnitzel with Herb Brown Butter
Makes 4 servings
2 boneless skinless chicken breasts
1/2 tsp salt, divided
1/2 tsp ground pepper, divided
1/4 cup whole wheat flour
2 eggs, beaten
1 lemon
2 cups bread crumbs
Olive Oil cooking spray
2 Tbsp. butter
1 Tbsp.olive oil
1 shallot, minced
1/4 cup shopped fresh herbs such as dill, parsley and chives.
Preheat oven to 450 degrees. Coat a large baking sheet with cooking spray.
Cut chicken breasts in half horizontally. Cover and pound with smooth side o a meat mallet to a 1/4 inch thickness. Sprinkle chicken with salt and pepper.
Place four in one shallow dish and eggs in another. Zest lemon and combine it with breadcrumbs in a third shallow dish. Set aside. Coat both sides of the chicken in the flour and then dip in egg. Coat both sides with the breadcrumbs, pressing to help make them stick. Place the chicken on the prepared baking sheet and coat on both sides with cooking spray
Bake the chicken until golden brown and no longer pink in the middle.
Meanwhile, melt butter in a small sauce pan until just beginning to brown. Add oil and shallots;; cook for 30 seconds more . Remove from heat , add herbs and the remaining salt and pepper. Serve the chicken with the sauce and lemon slices.
For easy clean up you can line your baking sheet with foil before you apply the cooking spray.
Serving size is 1 cutlet and 1 Tbsp. sauce.
I’ll be having mine with some sweet potatoes and green beans today.

It's a great day to make some cookies !
There'll be no cookie-making here today ... I can't trust myself not to consume the whole batch. LOL. I could, however, sure go for some of my mother's Schnitzel right now. That was always a comfort-food sort of meal. Enjoy!
