Today is International Mountain day which was designated by the United Nations General Assembly in 2001 to create awarenesses about the important role that mountains play in the global ecosystem. Mountains are essential to the world’s fresh water supply. They also safeguard many natural resources and protect communities against national disasters .
The symbol for this holiday consists of three equilateral triangles. The left triangle has a blue diamond shape at the top, representing ice and snow on the mountain peaces. The middle triangle has an orange circle representing the resources that are found inside of mountains. The triangle on the right has a small green triangle at the base, representing the crops that grow on mountains
To celebrate today, be thankful for the mountains in our great country.

I’ve shown these pictures many times before they are of where my grandfather’s farm used to be . They lived in the gentle foothills of the Applaciation mountains in West Virginia. Some of them were quite tall and rose to great peaks, but nothing like the Rocky mountain range.
It’s so hard to believe another week is gone and here use are in the weekend, but there is good news today! My granddaughter was released from the hospital yesterday and she is now home home again. My daughter and my grandson are both doing much better and have not run a fever for few days now. Everyone is on the road to recovery! Thank you all so much for all your kind thoughts and prayers.
It is Saturday and my day to cook up something new for the weekend too.
On the menu is:
Pot Luck Sausage Casserole
Makes 10 servings
1 16oz. package penne pasta
1 lb. bulk Italian sausage
1 Tbsp. butter
1 Tbsp. olive oil
1 medium onion, finely chopped
1 carrot, finely chopped
1 1/2 tsp dried oregano
1 tsp. salt
1/2 tsp pepper
1 small zucchini halved lengthwise and sliced
1 cup chopped fresh mushrooms
6 garlic cloves, minced
1 15oz can tomato sauce
1 jar, 14 oz. pasta sauce
2 cups shredded mozzarella cheese
Preheat oven to 350 degrees. Cook pasta according to package instructions; drain and transfer to a greased baking dish. Meanwhile in a large skillet , cook sausage over medium high heat until no longer pink, breaking up into crumbles. Drain and remove from pan.
In same skillet heat butter and oil over medium high heat . Add onion, carrot, oregano, salt and pepper, cook and stir 5 minutes. Add zucchini, mushrooms and stir 8 minutes longer or until vegetables are tender.
Stir in tomato sauce, pasta sauce and sausage ; pour over pasta. Sprinkle with cheese . Cover casserole with a piece of foil coated with cooking spray.Bake 10 minutes, remove foil and bake until golden brown and cheese is melted, about 20 minutes longer. Let stand 10 minutes before serving.
I’ll be having this with a bread stick and a side salad for dinner today and tomorrow too.

Despite my having grown up in the mountains, I never heard about those 3 triangles' symbol --- interesting!
So glad to learn of your loves ones' healing; I know your heart is rejoicing!
