Today is Human Rights Day which celebrates the fact that on December 10, 1948 the United Nations General Assembly adapted the Universal Declaration of Human Rights. It is a reminder to all individuals to honor and stand up for their basic human rights.
The Universal Declaration of Human Rights is the most translated document in the world. It has been translated into over 500 languages, but it’s not legally binding.However, it is is an important document and is highly influential in international law.
To celebrate spend a few minutes learning about your human rights as a world citizen and let others know the importance of our fundamental rights.

I believe that we were all created to be equal. No one person is any better than you are and you are no better than anyone else is. We should treat others as we would like to be treated. We were meant to love each other.
Thankfully our country has it’s own bill of rights. The first 10 amendments to the Constitution are known as the Bill of Rights. They guarantee essentials rights and civil liberties.
All people should have the right to the pusuit of happiness.
Today is my day to cook up something new to eat and on the menu is:
Creamy Scallop Crepes
makes 6 servings
2 egg whites
1 egg
11/2 cups milk
1 cup flour
1/2 tsp. salt
2 Tbsp. butter, melted
Filling:
1 lb. bay scallops
1/2 cup chicken broth
1/8 tsp. white pepper
1 lb. fresh mushrooms
4 green onions, sliced
2 Tbsp butter
1/4 cup flour
2/3 cup evaporated milk
1/2 cup shredded Swiss cheese
Green onions sliced, optional
In a bowl, beat the egg whites, egg and milk .Combine flour and salt; add to the milk mixture , mix well. Cover and refrigerate 1 hour.
Brush a nonstick skillet with melted butter ; heat. Stir crepe batter; pour 2 Tbsp. into center of skillet. Lift and tilt pan to coat bottom evenly.Cook until top appears dry; turn and cook 20 seconds longer. Remove to a wire rack. Repeat with remaining batter brushing the skillet with melted butter as needed. When cooked, stack crepes with waxed pepper or paper towels in between.
In a large nonstick skillet bring scallops, broth, and pepper to a boil. Reduce heat; simmer until scallops are firm and opaque. Drain, reserving the cooking liquid; set liquid and scallops aside.
In same skillet, sauté mushrooms and onions in butter until almost tender. Sprinkle with flour and stir until blended. Gradually stir in evaporated milk and bring to a boil. Cook and stir until thickened. Remove from heat. Stir in the cheese and scallops .
Spread 1/3 cup filling down the center of each crepe ; roll up and place in a baking dish coated with cooking spray. Cover and bake at 350 degrees until heated through, about 15 minutes.
I’ll be having these with a side of coleslaw for dinner tonight.
Surprisingly we are to be in the 50’s today and tomorrow in the 60’s. But by the weekend we’re to get colder again. I’ just to try enjoy what we have when we have it and make the best of it!
