Today is National Hard Candy Day which celebrates the sweet, sugary taste that literally causes your mouth to water. It’s a celebration of all kinds of hard candy - everything from lollipops to candy canes to caramels. It’s no wonder that hard candy has remained so popular all these years.
Hard candy can be traced back to Ancient Egypt, Arabia and China. Archaelogolists in all of these regions have found traces of candied fruits and nuts that have been dipped in honey, which is a natural preservative. There is also evidence that people stuck sticks in them to keep their hands from getting sticky as they ate them, just like modern day lollipops
The worlds largest lollipop weighed in at 6,514 pounds. Ashrita Furman and members of the Sri Chinmoy Center made it in August of 2009 to break the Guinness World Record.
To celebrate today enjoy a piece or two of your favorite hard candy.

The morning dawned bright and sweet, like ribbon candy.

My favrite hard candy this time of year is the red and white peppermints or candy canes with peppermint flavor.I also like the red cinnamon candies. I try to keep some in my pocket and suck on them regularly.
I also love Candy canes in my hot chocolate making for a chocolate peppermint beverage. And one of my favorite quick desserts this time of year is to crush peppermint candy and mix it in with cool whip. Then I dip those chocolate wafer rolls in it. Mmmm deliciou !
Peppermints are thought to be good for you. They ease digestion, help you to sleep well and freshen your breath. It’s a great source of vitamin A and C and also can get rid of bacteria that may cause you to get sick. It can boost your immune system.
A cup of mint tea before bed can help you to sleep better and make you feel relaxed and less stressed.
After a wonderful Family get together yesterday, I must cook for today and on the menu is
Baked Chicken with Bacon Tomato Relish
Makes 4 servings
1 cup panic bread crumbs
2 Tbsp. plus 1 tsp. minced fresh thyme divided
1/2 tsp salt, divided
1/2 tsp pepper, divided
1/3 cup flour
1 egg, beaten
1 lb. chicken tenderloins
4 bacon strips, cut into 1/2 inch pieces
1 1/2 cup grape tomatoes, halved
1 Tbsp.red wine vinegar
1 Tbsp. brown sugar.
Preheat oven to 425 degrees. In a shallow bowl, mix bread crumbs, 2 Tbsp. thyme, and 1/4 tsp. each salt and pepper.Place flour and egg separate shallow bowls. Dip chicken in flour, then in eggs, followed by dipping in the crumb mixture. Place chicken on a greased rack in a baking pan Bake until a thermometer reads 165 degrees. about 15 minutes
Meanwhile in a skillet , cook bacon over medium high heat until crispy. stirring occassionally. Remove with a slotted spoon and drain on paper towels. Reserve 2 Tbsp.drippins in pan.
Add tomatoes, vinegar, sugar and remaining salt and pepper to the drippings. Cook and stir until tomatoes are tender, Stir in bacon and remaining thyme. Serve with chicken.
I didn’t have grape tomatoes so chopped up a whole tomato. I think I’ll have this dish with a baked pototo and sour cream.
I’m not doing much at all today but staying in and keeping warm. It was such a busy day yesterday, that I need my rest.

Peppermint is good and good for you too!
I, too, love peppermint! Your idea of crushing the candy and mixing with Cool Whip is great. Funny story: A few weeks ago one of our church friends came by with her 7 y/o great grand. Presley's such a doll, when she looked at the candy dish and then looked at me, I said, "Sure sweetie!" Never thought about them being the red cinnamon kind. Poor childs eyes grew so wide, and I could tell she was looking around for some place to spit it out!
