Today is National Cocoa Day, which celebrates a hot winter drink, hot cocoa!
Cocoa is made from the dried, fully fermented seeds of the cacoa tree. These seeds are ground to make cocoa powder, which is the main ingredient in hot cocoa that we all know and love.
Monkeys were actually the first creatures to discover cacoa plant was edible and tasty.1500 hundred years ago monkeys began to eat the pulp of the plant and spit out the beans. Humans soon caught on and the rest is history.
Cacao trees are grown worldwide, but it is thought the first grew in South America. Cocoa is similar to wine, in that its flavor profile differs based on where it’s grown. Lucky for us, cacoa trees are very plentiful, it takes 300 to 600 pounds of beans to make two pounds of chocolate.
To celebrate make you own favorite type of cocoa to enjoy. For a holiday treat try adding a candy cane!

Hot cocoa is one of my favorite drinks in the wintertime. I make it often, not from scratch but by the packaged mix that you simply pour hot water into. I’ve even had K cups of hot cocoa that I make in my Keurig coffee maker. It’s the perfect treat for a chocolate lover like me. I’ll be sure to have a cup or two to celebrate today!
It’s Monday and my day to cook up something new. The weekend leftovers are long gone.
On the menu for today is:
Pepper Steak with Squash
1 can , 14.5 oz, beef broth
2 Tbsp. soy sauce
3 Tbsp. cornstarch
2 Tbsp vegetable oil, divided
1 lb. beef flank steak, cut into thin strips
1 green pepper, cut into strips
1 red pepper, cut into thin strips
2 zucchini cut into thin strips
1 onion, cut into thin strips
3 cloves garlic minced
1 cup fresh snow peas
1 cup sliced fresh mushrooms
1 can sliced water chestnuts, drained, optional
Hot cooked rice
Mix broth and soy sauce with cornstarch until smooth, set aside.
In a large skillet heat 1 Tbsp.oil over medium heat. Add beef, stir fry until no longer pink. Remove from pan.
In same skillet , heat remaining oil . Stir fry peppers about 2 minutes. Add zucchini, onion and garlic and cook 2 minutes longer. Add snow peas, mushrooms and water chestnuts if using. Stir fry until crisp tender.
Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir until sauce is thickened. Return beef to skillet and heat through. Serve with hot rice.
I don’t have any water chestnuts so will leave them out of mine, it’ll be fine without them. There are plenty of other vegetables in this recipe to make it taste good.You could also have this over noodles if you don’t like rice. I like rice.
