ON THE BRIGHT SIDE
FRIDAY DECEMBER 3RD, 2021
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is National Roof Over Your Head Day which celebrates the single largest investment a person will make in their lifetime, buying a home.
Home owners are more active in their communities ,have improved educational opportunities and report higher levels of self essteem and happiness.
Regardless if you rent or own, today is an opportunity to take a moment to appreciate the roof over your head.
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
May you always have walls for the winds, a roof for the rain, tea beside the fire, laughter to cheer you, those you love near you and all that heart might desire.
Irish Blessing
I don’t own my home, but rent and I’m thankful to be able to do so. As I got older, I found it more and more difficult to keep up with owning my own home, so when I moved I decided to rent and let the landlord take care of any problems that might come up We have a terrific maintenance department here where I live and they know how to fix everything. At least I haven’t found anything yet. Everything here works like it should and if something happens, they come right out and get it right.
I was never much of a handy man, but they are. I think I made the best decision I could for me. I don’t have a mortgage payment to make, but I do pay rent that includes their all their services.
Fridays are day I cook up something new and on the menu is:
Mozzarella, Basil and Zucchini Frattata
Makes 4 servings
2 Tbsp. olive oil
1 1/2 cups thinly sliced red onion
1 1/2 cups chopped zucchini
7 eggs, beaten
1/4 tsp salt
1/4 tsp ground pepper
1/2 cup mozzella cheese
3 Tbsp. chopped sun dried tomatoes
1 cup thinly sliced fresh basil
Position rack in upper third of the oven. Preheat the broiler.
Heat broiler safe cast iron skillet over medium high heat. Add zucchini and onion and cook, stirring frequently, until soft;
Meanwhile, whisk eggs, salt, and pepper in a bowl . Pour the egg mixture over the vegetables . Cook, lifting the edges to allow uncooked egg from the middle to flow underneath, or until nearly set. Arrange the Mozzerella and sundried tomatoes on top and place under the broiler until the eggs are slightly browned and cheese is melted. Let stand 3 minutes before serving and top with basil.
To release the frittata from the pan, run a spatula around the edge and then underneath Until you can slide or lift it out onto a cutting board or serving plate . This will make 4 slices. I serve mine right from the pan.
I’ll be having mine with a side salad tonight.
I hope you all have a FANTASTIC Friday!
COUNTING MY GIFTS
You are rich if you have enough to meet your most basic needs. You are rich if you have access to clean water, food, and a roof over your head. You have to count your blessings to see that you are richer than you think.

There's no place like home.
That's an interesting sounding Frattata recipe, Ma. I love fresh basil!
Yes, we're sure blessed to have a secure roof over our heads; many aren't so fortunate.
Oh you are so smart! There is a man named Clark Howard who gives financial advice in Atlanta and he tells older adults to rent. See, he might have gotten that from you!! That recipe sounds very good, thanks!!
I think if I were alone I too would prefer to rent and I love your trailer and your red wreath you put out every Christmas.
