Today is Cookie Exchange Day, which is an opportunity to remember it’s not too late to host a cookie exchange party.
The first form of cookie exchanges began during the Middle Ages. During this period spices and dried exotic fruits were becoming increasingly popular in baking methods. Given their exoticism and price, families could only afford to bake cookies at Christmastime. They would share these treats with family, friends, and neighbors.
There is no better way to celebrate the holiday season than with tasty holiday cookies..Whether you prefer sugar cookies, gingerbread cookies or snickerdoodle, or peanut butter cookies, spend some time baking a batch in honor of this holiday.

THOUGHT FOR TODAY
I don’t bake much these days, but I do have cookies as my family have graciously shared theirs with me. They all bake and are good at it too. They were always in the kitchen when I made cookies, especially the boys. They decided to take over the cookie decorating one year, And those were the sweetest cookies we ever had.
I thought it might be nice if we did a virtual cookie exchange with each other this year. I’m going to share one of my favorite recipes with you today and I hope you’ll share one of yours with me.
Thumbprint Cookies
Makes 2 dozen
1/2 cup butter softened
1/4 cup packed brown sugar
1 egg
1/2 tsp. vanilla
1 cup flour
1/4 cup finely chopped walnuts
1/3 cup any fruit jam
1/4 tsp salt
Preheat oven to 300 degrees. Grease cookie sheets.
Separate egg, reserving white . Cream butter, sugar, and egg yolk.
Add vanilla, flour and salt, mixing well.
Shape out into balls. Roll in egg white, then in walnuts. Place on cookie sheets 2 inches apart. Bake for 5 minutes
Remove cookies from oven. With thumb, dent each cookie. Put jelly in each thumbprint. Bake for another 8 minutes.

This is my day to make up my grocery list from the menu I’ve prepared for next week. Since I have a new Insta Pot, I’m planning on using it in the days ahead.
On the menu for next week is:
Monday - Potato Soup
Wednesday -Pork Ribs
Friday - Creamy Mac and Cheese
Weekend - Swiss Steak
On the menu for today is not an Insta Pot recipe :
Easy Cauliflower Shepherds Pie
Makes 4 servings
2 12 oz. pkgs frozen mashed cauliflower
2 Tbsp. dried chives
1/4 tsp. ground pepper
1 lb. lean ground beef
2 tsp. Worcestershire sauce
1 tsp dried thyme
1 1/2 cups frozen peas and carrots
1 cup frozen chopped onions
1/2 cup grated sharp Cheddar cheese
Place oven rack to 5 inches from broiler. Preheat broiler to low setting
Microwave cauliflower to package directions until softened. Stir in pepper and chives. Set aside
Meanwhile heat a large cast iron skillet over medium high heat. Add beef and cook, stirring occasionally and breaking up the meat until browned. Stir in Worcestershire and thyme, then add peas and carrots and onion, cook until the vegetables are softened. Remove from heat.
Spread the cauliflower mixture evenly over beef mixture and sprinkle with Cheddar. Broil until the top is browned, about 3 minutes.
If you don’t have an ovenproof skillet you can transfer the beef mixture to a baking dish after removing it from the heat.
Mashed cauliflower is a healthy substitute for mashed potatoes.
