Today is National Roast Suckling Pig Day which celebrates the time of the hectic holiday season that people prepare roast pigs which are an iconic holiday dish often dipicted as the center piece of a massive feast.
It typically takes two days to roast a pig. It’s difficult to imagine that any one would actually have the time to roast a pig during the holiday season.
A suckling pig is a young piglet that has not yet been weened from its mother. They are considered a delicasy because the meat is very tender compared to older pigs. They range in weight from 9 to 20 pounds depending on how many people you need to feed.
There are various recipes for suckling pig that can be traced back to Ancient Rome and China.
To celebrate today start gathering the necessary ingredients for your holiday feast.

Today is our family feast. It’s going to be smaller than usual and we’re to feast on nothing but appetizers. There are so many good ones out there. We won’t be having a traditional Christmas dinner, which usually includes a ham, not a pig. But it comes from a pig.
DD and her family will be our hosts today. She has totally recovered and has gone back to work now. And thankfully, no one else in her family caught the virus either.
I’ve purchased several things to take along to share with every one. I got some Tortilla chips, DD has the salsa, shrimp cocktail, some mini quiches, pinwheel chicken snacks, and lots of fruit. Apples, tangerines, grapes, watermelon and pineapple. I even found some Hungarian Nut Roll to take along. Something for every one, I hope. Others are bringing something else to share too. Unfortunately, only 3 of the 5 families here in Ohio will be at our family gathering . We hope to connect with everyone over a zoom call so we’ll see how that works out.
It seems there is a lot of sickness going around, other than my granddaughter recovering from pneumonia, I don’t know what anyone else has right now. No one said, but I’m praying they will all be well soon.
Of course the ones that cannot be here will be missed but for those of us that are here, it’s guaranteed there will be plenty to eat. We did a zoom call last Christmas too when none of us could be together so at least this is better than then.

I don’t have a recipe to share today as I’m not cooking, but will be doing that tomorrow.

So glad your DD is fully recovered! All these snick-snacks sound wonderful. I think we're planning something on Christmas eve along the same lines. No muss, no fuss. Just good times!
