Today is Go Caroling Day which celebrates a popular holiday event.
A Christmas carol is a song whose lyrics are on the theme of Christmas or the winter season in general, and which are traditionally sung during the period immediately surrounding the holiday. Christmas carols may be regarded as a subset of the broader category of Chrismas music.
Christmas carols and songs written in the United States range from Jingle Bells and O Little Town of Bethlehem to Away in a Manger and numerous others of varying genres.

Christmas now surrounds us. Happiness is everywhere. Our hands are busy with many tasks. As carols fill the air.

We used to have Christmas carolers that would wander up and down the street, going from house to house singing Christmas Carols, It’s been awhile since I’ve heard any outside my house. But here I do have the Christmas music playing all day long on the radio. One of my favorite memories is of when I went caroling with the scout troop. They made a lot of people in nursing homes happy for several years. We also have lots of Christmas carols sang at our church and our choir is one of the best.
Christmas music seems to be everywhere I go this time of year and it’s such a pleasure for me to listen to it. My favorite songs include Christmas carols. I learned them as a child and still sing them. I’ll never forget the words.
Now my grandchildren are growing up learning the same old songs I sing. Some things are better if they stay the same and Christmas carols are one of them!
It’s Monday and my day to cook up something new for the week ahead and on the menu for today is:
Grandmas Swedish Meatballs
This is not my Grandma’s recipe but it was somebodies.
Makes 4 servings
1 egg, slightly beaten
1/2 cup crushed saltines
1/4 tsp seasoned salt
1/4 tsp pepper
1/2 lb. lean ground beef
1/2 lb. bulk pork sausage
1/4 cup plus 2 Tbsp. flour, divided
2 1/2 cups beef broth, divided
Hot mashed potatoes
Minced fresh parsley, optional
Mix first 4 ingredients. Add beef and sausage, mix lightly but thoroughly. Shape into 1 inch balls toss with 1/4 cup flour, coating lightly.
In a large skillet, brown meatballs over medium high heat. Add 2 cups of broth, bring to a boil.
Reduce heat, simmer, covered until meatballs are cooked through, about 5 minutes
Remove meatballs with a slotted spoon. Mix the remaining flour and broth until smooth. add to pan. Bring to a boil and cook until thickened. Return meatballs to pan, heat through. Serve with mashed potatoes, if desired sprinkle with parsley.
Traditional Swedish meat balls have nutmeg in them so I did add a tsp. of nutmeg to mine. It’s a delishious dish and easy make.
