Today is New Year’s Eve which is a special occasion celebrated across the globe. Many cultures have fireworks displays and other festivities to celebrate.the start of the New Year. In Mexico people make a wish and eat a grape with each of the twelve chimes of the bell ringing the countdown in the New Year. In Brazil, they typically dress in white to bring good luck and peace for the year to come.
In the United States, New Year’s Eve is usually a major social holiday. Typically hugh crowds gather in New York City to watch the ball drop in Times Square, a tradition that began in 1907 after firecrackers were outlawed. At midnight, it is customary to kiss a loved one, toast with champagne, and sing Auld Lang Syne.
Celebrate today at home with your family or virtually with your friends and enjoy the countdown to midnight. Happy New Year !

I’m sending you all good wishes for a safe and Happy New Year.
It will be a quiet evening here watching the ball drop in NYC. I have a few snacks on hand and some bubbly water to cheer in the New Year.
I no longer make resolutions but simply hope to make each year better than the one before. After the past 2 years, I would think we all want the coming year to be a better one.
There is always room for improvement. We can only try to live each day in the best way we can. I try to do my best and hope to get better.
On the menu today is another insta pot recipe:
Creamy Mac and Cheese
Makes 4 servings
4 oz. whole wheat rotini, about 3 cups
1 1/2 cup vegetable broth
1/4 cup milk
1/2 tsp salt
1/4 tsp. pepper
2 cups frozen baby broccoli florets, thawed and patted dry
1 cup shredded Cheddar Cheese
2 oz. cream cheese
Combine pasta, broth, milk, salt and pepper in an insta pot . Close and lock like. Cook at high pressure for 7 minutes.
Release the pressure. Add broccoli, Cheddar and cream cheese. Stir until the cheese has melted. Let stand for 5 minutes. Stir again and serve.
I’ll be having this with some coleslaw and baked sweet potataes.
