Today is National Maple Syrup Day which celebrates a distinctly North American product. Canada is the largest supplier maple syrup, produces over 5 million gallons of it each year.
Native Americans were the first to harvest and boil the sap of the maple tree into a thick syrup, a process that was documented and adopted by early settlers in the 1600’s.
Tapping a maple treed does no permanent damage to the tree and only 10 % of the sap that is produced in a year is actually collected. Many maple trees have been tapped for 150 years or more.
It takes 30 to 50 gallons of sap to make one gallon of maple syrup. Maple syrup can be boiled down to maple cream, maple sugar and maple sugar candy.
Whether you like your maple syrup as a topping on pancakes, waffles or vanilla ice cream, enjoy some today in honor of the holiday!

I happen to love maple syrup on my ice cream so will definitely be celebrating today by having some for desert! It’s delicious !!!
I always keep some on hand as I often have breakfast for dinner too. I love it on my pancakes and waffles. I do have other syrup, but it’s not half so good.
It’s always available at the grocery store and I buy the Ohio brand. Got to support the home team!
Today is also my day to cook up something new and on the menu is
Make Ahead Broccoli Cheddar Quiche
makes 8 servings
1 8 inch frozen pie crust shell
1 8oz. package of brocolli florets
1 1/2 tsp. olive oil
1 cup chopped sweet onion
4 eggs
1/2 cup evaporated milk
3/4 cup Cheddar Cheese, shredded
1/8 tsp ground pepper
Preheat oven to 400 degrees . Let pie crust thaw at room temperature for 10 minutes. Bake until lightly browned, 10 to 15 minutes. Let cool slightly. Reduce oven heat to 375 degrees.
Meanwhile cook brocolli according to package directions until tender crisp. Coarsely chop any larger pieces.
Heat oil in a large skillet, over medium high heat. Add onion and cook until golden brown.
Whisk eggs and evaporated milk in a medium bowl.Stir in the brocolli and onion along with cheese, salt and pepper. Pour the mixture into the cooled crust.
Bake until the center is just set and the edges are golden brown. About 30 minutes. Let stand 10 minutes before serving.
This is also delicious the next day. All you have to do is microwave it 2 minutes after taking from the refrigerator.
I’ll be having mine with a small fruit salad.
Other than the first picture today, I couldn’t find any other maple syrup pictures to show today so the rest are of some of the grandchildren at church one Christmas Eve.

Nothing tastes as good as pure maple syrup!
Tom enjoyed syrup today on his 'Polish pancakes'! It's been so long since I enjoyed a good quiche; I love eggs and broccoli, too, so this sounds like a low-carb winner.
