Today is National Coffee Day which celebrates a popular beverage to start the day. According to legend a sixth century Ethopian goatherd named Kaidi discovers his goats frolicking from one coffee shrub to another. He realized the coffee berries and a stimulating effect on them and began to experiment with the seeds. A centery later, brewed coffeee emerged in Arabia and the popularity of coffee grew at and exponential rate.
Today over 400 cups of coffee are consumed each year per person. It is a world commodity second only to oil.
To celebrate today, take a coffee break or two in honor of this important beverage.

I’m a coffee addict and can’t start my day without a cup of good hot coffee. I also like iced coffee in the summer time.
It’s not only refreshing but it also gets me going. I can’t imagine starting the day without my cup of coffee. It’s warming in the winter time and I love all kinds of flavored coffees. Right now my choice is pumpkin spice. There are many varieties to choose from and what I have is McCafe Pumpkin Spice. Not all flavors are equal an I’ve found this to be one of the best.
I have a Keurig coffee maker and use the K cups to brew my coffee. I like it because every cup is hot and fresh and I have so many options when it comes to K cups. I look for new flavors and collect them.
Besides a cup of coffee today I’m making up my grocery list this morning so I can go grocery shopping later on today.
I always make up a menu for the week in order to do this and on my menu for next week is;
Monday - Slow cooker Spaghetti and Meatballs
Wednesday- Southwestern Casserole
Friday-
Weekend -Four Cheese Sausage Rigatoni
On the menu for today is:
White Chicken Chili
Makes 10 servings
1 lb. boneless skinless chicken brasts, chopped
1 onion chopped
1 tbsp. olive oil
2 garlic cloves, minced
2 cans, 14 oz.each, chicken broth
1 can green chopped chiles, optional
2 tsp. ground cumin
2 tsp. dried oregano
1 1/2 tsp cayenne pepper
3 cans drained great northern beans, rinsed
1 cup shredded Monterey Jack cheese
Sliced jalapeño pepper, optional
In a Dutch oven over medium heat cook chicken and onion in oil until lightly browned. Add garlic and cook one minute longer. Stir in broth, chilies if desired, cumin, oregano and cayenne pepper; bring to a boil.
Reduce heat to loa and mash on can of beans until smooth. Add that on the other can of whole bens to saucepan. Simmer 20 to 30 minutes until chicken is no longer pink and onions are tender.
Top each serving with the cheese and if desired, jalapeño pepper.
I don’t use the green chillies or jalopena peppers. I like mine mild. The other spices will be plenty enough for me. I will be having this with a big piece of buttery cornbread.
Today is also the day of DS#6’s surgery and he has asked for all the prayers her can get. They are very appreciated
We have a bueautiful fall day in store today with temps in the low 70’s. I can finally finish up my fall decorating today as DS#5 come over and got the storage bins out of the shed on the carport for me last night.
It’s going to be a busy day for me!
