The month of February is African American Cultural Heritage Month. American Heart Month, Declutter for A Cause Month, Fabulous Florida Strawberry Month, Great American Pies Month, Library Lovers Month, National Bird Feeding Month, National Canned Food Month, National Cherry Month, National Snack Food Month, National Time Management Month, National Weddings Month, National Dental Health Month, Responsible Pet Owners Month, Sweet Potato Month, and Worldwide Resnaissance of the Heart Month.
Today is National Freedom Day which celebrates the signing of the 13th amendment to the United States Constitution by President Abraham Lincoln in 1865.
The 13th Amendment was proposed to abolish slavery in the United States. The amendment was ratified on December 28th, 1865. roughly after 7 months after the end of the Civil War; thus formally outlawing slavery in the nation.
National Feedom Day was established on June 10th, 1948 The national holiday was made official by President Harry Truman,, however the day was advocated for by activist Richard R. Wright, who was born into slavery in Georgia and resided in Philadelphia.
Today acknowledge and celebrate the important steps we have made toward freedom and equality as a nation. At the same time recognize the importance of preserving and advocating for equality and justice for all citizens.
Today is also National Baked Alaska Day.

I do believe we are all born equal and should have equal rights. We are all precious in God’s sight, no matter what color our skin is, uniquely and wonderfully made. I was taught that no one is better than me and I’m no better than anyone else. We are all equal. We have rights as a citizen of the United States that provide justice and freedom for all.
I try to always treat others as I would treat myself, with fairness and equality always in mind.
On the menu for today is:
One Pot Meaty Spaghetti
Makes 6 servings
1 lb. extra lean ground beef.
2 garlic cloves, minced
1 tsp sugar
1 tsp basil
1/2 tsp oregano
1/4 tsp salt
1/4 tsp paprika
1/4 tsp. pepper
1, 28 oz. can diced tomatoes. undrained
1 can, 15 oz., tomato sauce
2 cups water
1/4 c. chopped fresh parsley
8 oz. uncooked whole wheat spegetti, broken in half.
1/4 c. grated Parmesan cheese
Additional chopped parsley for topping
In a 6 quart pot, cook and crumble beef with garlic over medium heat until no longer pink, 5 to 7 minutes. Stir in sugar and seasonings, Add tomatoes, tomato sauce, and 1/4 cup of parsley. bring to a boil. Reduce heat and simmer covered 5 minutes.
Sir in spaghetti, a little at a time , return to a boil. Reduce heat to medium low and cook uncovered until spaghetti is all dente. Stiring occasionally, Stir in cheese. Sprinkle with additional parsley.
This will make a great dinner served with a side salad and some crusty bread. I have some garlic bread in the fridge that needs using up.

So many fun and important February themes! That spaghetti looks wonderful! Tom made a BIG batch yesterday with Italian sausage and put up 3 containers-full in the freezer. I still haven't been able to find the wheat pasta at Wal-Mart, but may check Whole Foods next time we're in Montgomery.
Your pasta dish sounds delicious, hope you enjoyed it! The chicken meatball dish I made was really good, nice and spicy too!
