National Umbrella Day which casts a little shade on February. . The day honors one of the most useful inventions, the umbrella.
Not only does the umbrella keep us dry from the rain, but it protects ua from the heat of the sun. Umbrellas can also be used as a fashion accessory. While the umbrella is primarily practical, they also decorate cocktails. These brightly colored paper umbrellas make a fun party favor especially when visiting sunny locations.
They also serve as a canvas for art, in movies, umbrellas play a role too. For expample they played vital parts on both Singing in the Rain in 1952 and in Mary Poppins in 1964.
Celebrate today and find your umbrella, Spring is sure to come and we’ll need them then.

My favorite kind of umbrella is a sun umbrella. They have some colorful ones that shade the tables and chairs around our community pool . That is what the pictures are of today. It’s a long time before we’ll be using them, but they are nice to think about.
I have several umbrellas here at my house. I keep one in the car in case of emergencies and there is one by my door in an umbrella stand for when I have to go out and get the mail when it’s raining.
It’s so cold here right now I don’t have to worry about that but it’s Wednesday and time for me to cook.
On the menu today is:
Chicken and Broccoli Casserole
Serves 8
1 tbsp. oil
1 lb. boneless skinless chicken breasts
1/3 c. flour
4 c. milk, divided
2 cups precooked brown rice
3 c. boccoli florets
1 1/2 c.. shredded Cheddar cheese
1/2 tsp. salt
1 cup store bought crispy fried onions.
Preheat oven to 400 degrees. Heat oil in oven proof skillet over high heat. Add Chicken and cook until well browned. Transfer to a cutting board and cut into 1 inch cubes
Whisk flour and 2/3 c. milk in small bowl. Add the remaining 3 1/3 cups milk to the pan; bring to a boil over medium high heat. Gradually whisk in the flour-milk mixture. Return to a boil and cook stirring often, until thickened. Stir in rice and broccoli, return to a boil and cook until broccoli is tender. Stir in the cubed chicken, cheese , salt and pepper. Sprinkle crispy onions on top.
Transfer; the pan to the oven. Bake until the casserole is browned and bubbling.Let cool 5 minutes before serving.
I used my cast iron skillet for recipes like this. It’s the only skillet I have that will go directly into the oven.
I’ve also made up a menu for next week as today is my day to go shopping. Although I may forgo this as it’s so bitter cold outside. I really don’t need to get anything. I’ve already got it all in my cupboards and freezer.
Menu for next week:
Monday - Cheeseburger Soup
Wednesday - Pork Chops with Garlicky Broccoli
Friday -Sesame Cilantro Shrimp
Weekend - Sheet Pan Chicken and Brussel Sprouts
Hopefully it will be warmer next week, I’ll need to go by then. But for now we’re all good.

It won't be long before you will be out there under those umbrellas enjoying spring weather! Dinner sounds delicious and great meals for the week :)
Your menu plans sound great, Ma! I'll be interested to read more about preparing those brussels sprouts. They've become so popular, but my taste buds still aren't buying it.
Good idea to keep several umbrellas at the ready. And the cute designs! They're not just for little kids anymore. Watch, now some fashionista will start coordinating umbrellas and masks.
