Today is National Frozen Yogurt Day. Originally the health conscious trend of the 1970’s spurred the creation of this frozen treat. However, it didn’t gain widespread popularity until the 1980’s when recipes improved to the frozen yogurt we know and love today.
Frozen yogurt has come to be eaten almost as much as ice cream, it is served in just as many flavorers and varieties. Frozen yogurt is a great source of calcium and potassium, but we still need to remember to enjoy it in moderation.
A healthier alternative to ice cream frozen yogurt is also slightly more tart. Eat it plain, or add toppings such as fresh fruit, fruit sauces, nuts coconut, whipped cream — whatever you like. With a vast variety of flavors there is sure be one out there for you.

While I do enjoy yogurt, I’ve never been a big fan of the frozen variety. However it’s been a while since I tried some, so maybe today should be that day. I love ice cream and it would be healthier for me to eat. Using the little trick, DS#6 taught me yesterday, I was able to get online today. Hopefully this problem can be righted in the future.
I’m not going to spend much time on the computer today since it already took up so much time yesterday. I’ve going to try and move forward on the work in my bedroom. I’d like to have it all done for the weekend. Sunday’s are my day of rest after all. So today is the day. Or else it will have to wait until next week, which is when I hope to move on to the bathroom.
Saturdays are always my day to cook for the weekend so I have that to do also
On the menu is;
Italian Beef Tortellni Stew
1/3 cup flour
1 tsp pepper, divided
1 lb beef stew meat, cut into 1 inch cubes
3 tbsp. olive oil, divided
2 medium zucchini, cut into 1/2 inch pieces
1 onion chopped
2 celery ribs, sliced
3 carrots sliced
3 chives garlic, minced
1 1/2 tsp each oregano, basil and marjoram
1 cup beef broth
1 can, 28 oz crushed red tomatoes
3 cups beef broth
1 tsp sugar
1 package, 9 oz. refrigerator cheese tortillini
1 pkg. 6 oz baby spinach
In shallow dish, combine flour and 1/2 tsp pepper. Add beef, a few pieces at a time and turn to coat.
In a dutch oven, brown beef in 2 tbsp. oil; drain. Remove and set aside. In same pan sauté the zucchini, onion, celery, and carrots in remaining oil until tender. Add garlic, oregano, basil and Marjoram; cook 2 minute longer.
Add 1 cup broth stirring to loosen any browned bits from pan . Return beef to pan; add the tomatoes, broth, sugar and remaining pepper. Bring to a boil. Reduce heat; cover and simmer until beef is tender, 1 1/2 hours. Add tortellini and spinach. Return to boil. Cook uncovered until tortellini are tender, 7 to 9 minutes
This will make 6 servings.

Adorable photos! I'm glad you were able to get on the computer today and hope you were able to finish up in your bedroom, or close anyway. I can't wait for our rest day tomorrow, I've worn myself out. Your dinner sounds delicious - enjoy!
For several years, I used to be a HUGE fan of soft-serve frozen yogurt. Seems like those shops used to be everywhere; the biggest decision I had to make was peanut butter or chocolate. Not sure what happened, but I've not seen even a kiosk in a long time. Must admit, seeing these precious photos did make me shiver a little. It's c-c-c-cold!
