Created and evangelized by the character Leslie Knops on the TV show Parks and Recreation, Galentine’s Day is the celebration of important bond between your lady friends.
Since the holiday’s inception in 2010 women across the US have embraced Galentine;s Day as a new holiday.The occasion has transcended television fiction to become a symbolic day of friendship and female empowerment.

I do love and appreciate my gal pals. Some of us have been friends for over 30 years now. We don’t get together as much as we used to due to the virus, but we do still do communicate on the phone often. Checking up yeas other and making sure everyone is ok.
Of course they also get my daily newsletter. which I send out in an email and I also post on blogger, so I have several online friends too. I don’t know what I’d do without my lady firends. They help boost my moral often and always there with a friendly word or two.
Some of my friends are like family and some of my family are also my friends. Thankfully I have some wonderful people in my life. Their care and support are so appreciated! Thank you all and Happy Galentine’s Day!
Saturday’s are my day to cook for the weekend and on the menu is;
Hungarian Beef Goulash
Makes 8 servings
2 lbs beef stew meat, cubed
1 1/2 tbsp paprika
1/8 tsp salt
Ground pepper to taste
1 onion, chopped
1 red bell pepper, chopped
14 oz. can diced tomatoes
14 oz can beef broth
1 tsp Worcestershire sauce
3 cloves garlic, minced
2 bay leaves
1 tbsp. cornstarch mix with 2 tbsp. water
2 tbsp. chopped fresh parsley
Place beef in slow cooker. In a small bowl stir together paprika and pepper. Sprinkle on the beef and toss to coat well. Top with onion and bell pepper.
Combine tomatoes, broth, Worcestershire and garlic in a medium saucepan; bring to a simmer.pour over beef and vegetables. Place bay leaves on top and cover and cook 4 to 4 1/2 hours on high or 7 to 71/2 hours on low.
Discard the bay leaves;. Add the cornstarch mixture to the stew and cook on high stirring 2 or 3 times, until thickened. Serve with parley sprinkled on top. Serve over whole wheat noodles.
Note: Paprika that is labeled Hungrian is worth seeking out for this dish because it gives a fuller richer flavor than a regular paprika. I cut this recipe in half for me.

I'd not heard of Galentines Day ... that's SO neat! How I cherish my friends -- both in Blogland and now, at Bible study. Heretofore, for the last 30-some years I had lots of acquaintances, but no local girlfriends my age. Unexpected blessings, moving to small town Alabama!
