Today is World Read Aloud Day which celebrates the importance of reading, writing and sharing stories. Worldwide peaple of all ages will participate to raise awareness for literacy rights. Everyone should have access to the written word, just like we do.
Over 1 million people in 100 countries will celebrate the day to fight for the right to read, write and communicate. Nearly 800 million people worldwide are still illiterate and this day aims to raise awareness and change that statistic.
Celebrate today by reading aloud with your family. Read your kids favorite books together to educate them on the power of literacy and why it is so very important.

I love to read and over the years have done a lot of reading aloud to my family and my grandchildren. There is no end to the variety of books you can read. My favorites are about history and and fairy tales that come true. There is no end to what we learn by reading either, I’ve found no better educator than books. They tell about places I’ve never been and places I’d like to see.
Of course I like cookbooks too and find lots of recipes to try out. On the menu today is
Busy Day Pork Chops
1/4 cup milk
1/4 cup whole wheat bread crumbs
1/4 cup grated Parmesan cheese
1/4 tsp salt.
1/8 tsp pepper
4 boneless pork loin chops
Cooking spray
Preheat oven to 375 degrees. Place milk in a shallow bowL. In another bowl toss the bread crumbs with cheese and seasonings.
Dip pork chops in milk then coat with crumb mixture. Place on baking sheet coated with cooking spray .Lightly spritz chops with cooking spray.
Bake 20 minutes on each side or until thermometer reads 145 degrees. Let stand 5 minutes before serving.
For a healthy side dish try making Honey Thyme Butternut Squash
1 butternut squash peeled and cubed
1/4 cup butter, cubed
3 tbsp. cream
2 tbsp. honey
2 tsp parsley flakes
1/2 tsp salt
1/8 tsp thyme
1/8 tsp. pepper
In large sause pan bring 1 inch of water to boil. Add squash and cover and cool 15 minutes until tender.
Drain and mash squash with remaining ingredients.
It’s also my day to do my grocery shopping and for that I made up a new menu for next week so I’d know what I needed to get
Menu for next week is;
Monday - Hmburger Buddy
Wednesday - Chicken and Broccoli Casserole
Friday - Baked Mac and Cheese
Weekend - Hungarian Beef Goulash
It’s cold out today so I’ll need to bundle up going out, but the roads should be all clear as well as the parking lots.

READ A BOOK TO SOMEONE TODAY!
My goodness! So many things resonate with this reader. First, Sean Dietrich's column this morning about the farmer's wife reading to the critically ill dog. I've even read news accounts where volunteers spend their New Years Eve's reading to shelter dogs to calm them. Tom and I both enjoy pork chops - but I especially love butternut squash. Not sure if y'all have Boston Market stores in Ohio, but they used to make the BEST b/s. Anytime I had a sore throat that was my go-to. I was just talking about that on Terri's blog this morning. She's not sure if hers is a cold or ever-effect of the vaccine. Tom's DIL -- an ICU nurse in Phoenix -- had a little reaction from both her first and second vaccine. How are you feeling?
PS - I really didn't mean to prattle on so much!
