Today is Lincoln;s Birthday, which celebrates the birthday of our 16th Present in 1809. This Kentucky born Civil Rights Activist is considered one of America’s grated heroes. He began with humble beginnings rising up to claim the nation’s highest office. His tragic death in 1865 came at a time when American needed him most.
Lincoln’s birthday is observed as a legal holiday in many US states. The earliest recorded observation of this great man’s birthdays in 1874 initiated by a pharmacistin Buffalo, N.Y.
For his birth there is an annual wreath giving ceremony at the Lincoln Memorial in Washington D.C As part of the bicentennial celebration, the U.S Mint released four new pennies featuring states of Lincoln’s life - the log cabin birthplace, reading as a young man while taking a break from log splitting, as a State Legistlator in front of the Illinois Capitol building and finally a partially built dome of the U.S Capitol building.
Lincoln was also known as Honest Abe and the Great Emancipator, two titles he fully lived up to during his political career. He maintained the Union during the U.S. Civil War, and allowed the emancipation of many slaves. Celebrate his great accomplishments today by learning more about his life, pick up one of the many books dedicated to him or watch the 2012 epic historical drama.
Today is also National Plum Pudding Day and the Lunar New Year.

Lincoln is my all time favorite President and I’ve read a lot about his
life. He is a man that deserves to be honored today. We here in Ohio don’t celebrate his birthday as a state holiday. We used to do that but since President’s Day came into being, he doesn’t get his own day anymore. It used to be a day off from school. Some states all still do that, I guess they all had the choice of what they wanted to do.
It’s Friday and it’s my day to cook and on the menu today is:
Sesame Cilantro Shrimp
1 tbsp. plus 1/2 cup Asian Toasted sesame salad Dressing
2 lb. uncooked shrimp 31-40 peeled and deveined.
Lime wedges
1/4 cup chopped fresh h cilantro
Hot cooked brown rice.
In a large skillet, heat 1 tbsp. dressing over medium heat. Add shrimp, cook and stir one minuted.
Stir in remaining dressing, cook uncovered until shrimp turns pink. To serve squeeze lime juice over top and sprinkle with cilantro if desired . Serve with rice.
Shrimp is a quick and easy dish to fix. I didn’t have an Asian dressing so made up my own to use.
Asian Salad Dressing
1 garlic cloves, minced
1 tbsp soy sauce
2 tsp rice vinegar.
1/2 cup olive oil
1 tsp. toasted sasame oil
salt and pepper
Whisk; garlic, soy sauce, and vinegar in a small bow. Gradually whisk in olive oil, the sesame oil. season with salt and pepper.
Dressing can be made 2 days ahead. Transfer to jar, cover and chill.

What a remarkable individual. I, too, remember when Lincoln's birthday was a school holiday. My father was a big fan of Honest Abe; in fact, had I been born a boy, my parents would have named me after Lincoln's son, Tad.
Happy birthday Abe! Sure look like you have a lot of snow there Ma. Enjoy that Sesame Cilantro Shrimp this evening and stay warm!
So easy to forget the great people of our country and all they did, thanks for the reminder. Good thing you have those black shutters on your trailer or it would just blend in with all that snow!
