Today is National Tortilla Chip Day which honors Rebecca Webb Carranza who invented the tortilla chip in the 1950’s . Carranza and her husband owned El Zarape Tortilla Factory in Los Angeles and were among the first to mass produce tortillas. The machine often produced misshapen tortillas and Carranza decided to try and use them instead of throwing them away. She cut the rejected tortillas into triangles, fried them and sold them for a dime a bag.
Tortilla chips soon became a nationwide sensation. served along side salsa, chili and guacamole and a variety of other appetizers. In 2003 the state of Texas made the tortilla chip the official state snack!
To celebrate today, buy a bag of your favorite tortilla chips or try making your own and enjoy them with your favorite dip.

After 5 days off line, I finally got a technician who came to the house and fixed my internet! He’s the best ! No one else has figured out the problem and they didn’t even come to the house to check to see what was going on here. They said they were checking outside here but not here. Looking for a cable problem. This guy knew what to do to get me on line again and did it.
I felt so out of sink and totally mixed up. I need my daily interaction on line.
Since I didn’t do anything but read, I’m going to go with the same menu this week that I had last week. I didn’t cook what was on the list for this week lat all but microwaved a few things and cooked up some comfort food to eat
So my menu for next week is:
Monday- Meatless Chili Mac
Wednesday- Quick Beans and Rice Buritos
Friday-Homemade Fettuccine Alfredo
Weekend- Cacciatore Chicken Breasts
For dinner today I’m making:
Pork Chops and Garlicky Broccoli
Makes 4 servings
1 1/2 lbs. broccoli with stems, trimmed and cut into spears
6 tbsp. olive oil, divided
1 cup whole wheat bread crumbs
1/4 cup grated Parmesan cheese plus more for serving
1/4 cup whole wheat flour
1 egg, lightly beaten
4 boneless pork chops
3/4 tso salt
1 tsp lemon juice
4 cloves garlic, minced
1/4 tsp.crushed red pepper
2 tbsp. red wine vinegar
Chapped thyme for garnish
Position rack in upper third of oven; preheat boiler to high. Line a rimmed baking sheet with foil.
Toss broccoli with 1 1/2 tbsp. oil on the prepared pan and spead it in an even layer. Broil stirring once, until charred in spots., About 10 minutes. Transfer to a bowl and set aside.
Meanwhile combine breadcrumbs and Parmesan in a shallow dish. Place flour in another dish and egg in a third dish. Sprinkle chops with 1/4 tsp salt then dredge in flour, dip in egg, and coat with breadcrumb mixture.
Heat 1 tbsp oil in a nonstick skillet over medium heat. Add the chops and cook turning once, until golden brown and instant read thermometer inserted in the thickest portion registers 145 degrees. Transfer to a plate, drizzle with lemon juice. Tent with foil.
Wipe the pan clean . Add the remaining 1 1/2 tbsp. of oil garlic ,and crushed red pepper. and cook over low heat, stirring until garlic is sizzling. Remove from heat and stir in vinegar and remaining salt. Drizzle over the reserved broccoli and toss to coat. Serve pork chops and brocolli more Parmesan and thyme, if desired.
Our weather has warmed up considerably and today we’re to be mid 40’s and windy. I’ll be going out to do my shopping hopefully won’t blow away!

ADVICE FOR TODAY
Sometimes for an afternoon snack, I’ll get some tortilla chips and half an avocado and I’ll just eat that like quacamole.

These chips make a good snack and I've snacked a lot the past few days, but now I'm back on track and back to cooking healthy meals.
What a stroke of good fortune to find that technician! I know some people blog using their phones, but I could never do that ... I even struggle to leave comments if I'm away from the desktop.
Warm tortilla chips and queso dip sounds soooo good right about now. Unfortunately, they're not something I can eat in moderation. ☹
I'm thankful you had a good technician that was able to get to the bottom of things. I would be lost without internet these days. Welcome back :)
