ON THE BRIGHT SIDE
FOR FRIDAY, FEBRUARY 5TH, 2021
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

THOUGHT FOR TODAY
There is a shade of red for every woman.
Audrey Hepburn
I love red and wear it often. Truly I have enough red tops I could wear them every day of this month. So I’m definitely wearing red today.
This post is late today due to problems with a system update. Hopefully we’ve got that fixed for now. We’ll see….s
I’vs had my annual physical and am doing what I can to be healthier by eating the right food. My blood pressure had gone way over the height it should be so I had to change. I’v lost 12 pounds and my doctor is happy with my progress. My blood pressure is still not perfect but it’s getting there. My blood sugar level was also higher than it should be. I’m not diabetic but headed there if I don’t watch what I eat. So I’ve cut way back on the sweets and don’t even put sugar on my cereal anymore. I don’t use salt either, it makes the blood pressure higher.
On the menu for today is:
Caribbean Shrimp and Rice Bowl
1 ripe avocado, peeled and pitted
1/3 c. sour cream
1/4 tsp. salt
1 can, 15 oz. black beans, rinsed and drained
1 can 8 oz. crushed pineapple, undrained
1 mango, peeled and cubed
1/s cup salsa
1 8.8 oz. page ready to serve brown rice
1 lb. uncooked shrimp. peeled and deveined
1 tsp Carribean jerk seasoning
1 tbsp. oil
2 green onions, sliced
Lime wedges, optional
For avocado crem, mash avocado with sour cream and salt until smooth. In a small saucepan, combine beans pineapple, mango and salsa, heat through, stirring occasionally. Prepare rice according to package directions.
Toss shrimp with seasoning. In a large skillet, heat oil over medium high heat. Add shrimp and cook, stirring until shrimp turns pick.
Divide rice and bean mixture among 4 bowls, top with shrimp and green onions. Serve with avocado cream and if dismissed, lime wedges.
I don’t have an avocado on hand so am using some wholly guacamole I do have on hand. I don’t have any mango either so am using. some peaches instead. I think it’ll still have a good flavor and am looking forward to trying this new recipe out.
Don’t forget to wear Red today and support Women’s Heart Health!
I hope you all have af a FANTASTIC Friday !

This day has been very frustrating to say the least. Thanks to DS#6 for getting me back on line!
I'm so sorry to learn about your computer challenges ... but mighty glad it wasn't something more serious! Now I'm wishing I'd picked up some avocados yesterday. My shell-fish allergy won't allow for shrimp but the rest sounds de-lish.
