Today is National Mom and Pop Business Owners Day which celebrates small business owners. These individuals spend countless hours nurturing and growing their enterprises. The workload demands, and lack of a hired staff, often translates into long and late hours, and many missed family and personal events. But, all in all, they love what they do. After all, they are their own boss.

Around my part of the world, we don’t see many small businesses that are family owned anymore. There used to be a lot of them. You just don’t get the personalized service in a big franchise that you do when going to one of these. They make customers feel important and want to serve you.
My most recent experience with a family owned business was when I needed to find renters insurance for my new home. The company I had dealt with for years, didn’t carry it so I looked to find a new agent. I found several options but choose a local family business where I knew I get the service I needed. For me it was much better being able to talk to a real person than an automated service on line.
Here we are mid week already and the days are speeding by. Little by little I’m find a place for everything and it’s looking more and more like home here. There are still a few storage bins stacked here and there that have yet to find their spot, but it will come all in good time.

PRAYER REQUEST
Once again I’m asking you to join me in prayer for DS#1. Even though he’s been in the hospital and under treatment, he recently experienced signs that the medication we thought would be a cure is not working. His condition has worsened once again and although surgery was thought a last resort that may soon become a reality. This is not without risks and that is why they have waited to do so. May the dear Lord guide the doctors in their decisions as they move forward, and may a cure be found for my son. Your prayers are greatly appreciated.

Today is Lemon Chiffon Cake Day!
Something that is always worth celebrating is cake. Lemon Chiffon Cake Day celebrates the love of the deliciously light lemon cake that was invented by Harry Baker in 1927. After keeping the recipe a closely guarded secret for over twenty years, he eventually sold the recipe to Betty Crocker in 1947, after which the packet mix became the best selling favorite that is known and loved across the world today.
Maybe because of the yellow color, lemon always reminds me of Spring. So this delicious recipe is a good one to have on hand when company comes for Easter.
LEMON CHIFFON CAKE
2 c. flour
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/2 c. salad oil
7 egg yolks
3/4 c. cold water
2 tsp. grated lemon peel
2 tsp. vanilla
7 egg whites
1/2 tsp. cream of tartarLemon Glaze
Heat oven to 325 degrees. Stir together flour, sugar, baking powder and salt. Make a well and add in order: oil, egg yolks, water, lemon peel and vanilla. Beat until smooth.
Beat egg whites and cream of tartar in large mixer bowl until whites form very stiff peaks. Gradually pour egg yolk mixture over beaten whites, gently folding just until blended. Pour into ungreased tube pan.
Bake until top springs back when touched lightly, about 75 minutes. Invert pan on funnel; let hang until cake is completely cool. Spread with glaze.
LEMON GLAZE:
1/3 c. butter, softened
2 c. confectioners' sugar
1/2 tsp. grated lemon peel
2 to 4 tbsp. lemon juice
Blend butter, sugar and lemon peel. Stir in lemon juice, 1 tablespoon at a time; until glaze is desired consistency.

Will say a prayer for your son, Ma. We try to find local one restaurants here to eat at rather than big chains. Good to keep the business local. My mom made a regular chiffon cake, very delicious. The lemon one sounds tasty as well.
