Today is National Chocolate Covered Raisin Day which is a day to enjoy this tasty combination of chocolate and fruit. Chocolate lovers who like raisins, find the combination simply irresistible. Kids find them irresistible, too.
Raisins are an excellent source fiber, potassium, iron, calcium, and certain B vitamins. By adding a layer of dark chocolate to the outside of the raisin, you can add to the sweet treats health benefits because dark chocolate contains antioxidants and important minerals. Since there is also a fair amount of sugar in these treats though, be careful with how many you consume!

They say most any day is made better with chocolate. So why not have some today. I’m starting off here pretty slowly today. I guess I’m still recovering and will be taking it easy again today.
We’re to have some warm temps close to 70 degrees today. If the sun peeps through I may have to find a spot in the sun and soak up some rays here.
The idea of maybe opening up a window or two and letting in some fresh air sounds like a good idea too. Fresh air and sunshine ought to help cure what ails me. We’ll see how warm it actually gets.

There is a food holiday to celebrate every day of the year!
In honor of Chocolate Covered Raisins Day I found this recipe to share:
BROWNIES WITH CHOCOLATE COVERED RAISINS
Chocolate covered raisins turn into fudgy pockets of intense chocolate and chewy raisins in these easy brownies.
3/4 Cup butter
6 oz.semi sweet chocolate chopped
1 oz. unsweetened chocolate chopped
3/4 cup sugar
1 eggs
1 tsp. vanilla
2/3 cup flour
3/4 tsp. baking powder
1/4 tsp. salt
1 cup chocolate covered raisins
Preheat oven to 350 degrees. Butter 8 inch square pan. Stir butter and both chocolates in medium saucepan over low heat until melted. Remove from heat and cool to lukewarm.
Beat sugar and eggs in medium bowl until very thick. Stir in melted chocolate mixture and vanilla. Mix flour baking powder and salt in another bow. Stir into chocolate mixture. Mix in chocolate cover raisins.
Pour batter into prepared pan. Bake about 30 minutes, until tester inserted into center comes our with only a few moist crumbs attached and top cracks in places. Transfer to rack and cool in pan. Cover with foil and let stand at room temperature.

Interesting recipe with the raisins and brownies. Could be fun to try. Those are nice temps you are having. Hope they continue for a bit.

Goodness. What can I say (nicely) about raisins? My mother used to foist those wee boxes in my lunch bags, but it never 'took.'
70-degrees sounds really warm for your part of the country! I hope that warmth chases out any lingering flu bugs and you feel stronger SOON. :)
