I certainly have had my fair share of awkward moments lately. I think I’ve been so completely overwhelmed with all that has happened with the move, that I barely know what my name is. I know I’ve said a few things that made no sense at all over the past few weeks and before it’s all said and done, I’m sure there will be more of them too.
Instead of closing on our house sale this coming week as planned, now the buyer has asked for an extension and it’ll be April 10th instead. At this point I can only hope, this will all work out the way it’s supposed to.
Meanwhile, I’m continuing to unpack and trying to find room here for everything. Slowly but surely I’ll get it all done. One thing is for sure and that is starting over is not an easy job. They say that laughter is the best medicine. It doesn’t cure everything, but it certainly helps.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Corn Dog Day!
I do like a good corn dog now and then, but really have never made my own. I did however, find a recipe to share. Maybe someday I may try it out myself. Not all hot dogs are created equal and this would be a good way to make sure you have one you like.
CORN DOG BATTER
1 c. flour
3/4 c. cornmeal
1 tsp. salt
2 tbsp. sugar
1/2 tsp. baking powder
1 egg
1 c. milk
Just mix together in large bowl. Dip weiners in batter. Fry in hot grease.

I haven't had a corn dog in years, I remember the kids liked them a lot growing up. I too have never made them either. Simple looking recipe though.
I'm sure it will all work out with the buyer. It is good you are settling in and unpacking. Hardest part with that is remembering where you put things until you get into the new habit of where cups, plates, etc., are :)

Awkward Moments Day? ... oh, that's a great one!
After years of embarrassment after embarrassment, I've finally begun to consider my uh-oh's a gift to someone who may be in desperate need of a giggle. (Happy to oblige!)
Another of my blog friends (Terri who blogs over at "Your Friend from Florida") just completed the near-consecutive sale of her home and move to a smaller place in a 55+ retirement community. Theirs wasn't without a hiccup or two either, but everything worked out in the end. Stay strong!!!
