Today is Napping Day which is an unofficial holiday that falls on the Monday after DST begins in the United States. The day was created as a way to compensate for the hour people lose because of the time change. But this is one holiday that most people can get behind.
A nap is a short period of sleep usually taken during the day. Studies have shown that one or more short naps during the day can help increase productivity and alertness. It is believed that many successful people in history napped often. Some of these people were Einstein, Winston Churchill, and Napoleon.

I’ve definitely been missing my nap for quite awhile now. It would be nice to take a nap this afternoon after the busy days I’ve had.
It seems one of my front tires on my car, is pretty low on air though, so I know a trip out to the service station will be in order. Thankfully there is one near by.
Today’s pictures are of just a few of the spaces in my new home. It’s still cluttered, nothing is on the wall or windows yet. Slowly but surely I’ll get things in order here and show you more. I got the lovely flowers shown at the bottom from DS#5 and his family. They are so pretty I thought I’d better take a picture.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is National Coconut Torte Day!
COCONUT SOUR CREAM TORTE
CAKE:
1 c. butter, softened
2 c. sugar
4 lg. eggs, at room temperature
3 1/4 c. cake flour
1 tsp. baking powder
1 c. milk
1 tsp. vanilla
FILLING:
1 c. sour cream
1 c. sugar
7 oz. flaked coconut
Preheat oven to 350 degrees. Cream butter and sugar until light and fluffy. Add eggs, one at a time; beat well after each addition. Sift together cake flour and baking powder. Add alternately with milk. Stir in vanilla. Pour into 2 greased and floured 9 inch cake pans. Bake 30 minutes or until cake tests done. Cool about 5 minutes. Remove from pans and cool on racks. Split each layer horizontally.
Thoroughly combine sour cream and sugar; stir in coconut. Spread between layers and on top of cake. Serve immediately. Store covered in refrigerator.
