Happy St. Patricks Day!
Saint Patrick's day is in honor of the Patron Saint of Ireland, who brought christianity to the Emerald Isles, as Ireland is known. It is truly a day of celebrating Irish history, ancestry, traditions and customs.
Saint Ptaricks' Day has many symbols and traditons, from shamrocks and leprechauns, to green beer and Corned Beef and Cabbage. Saint Patrick's Day parades are popular in many cities around the U.S. Interestingly, the first St. Patrick’s Day parade did not take place in Ireland. It took place in New York City, in 1762.
With the spirit of everyone is Irish on St. Patrick's Day, keep your eyes open for leprechauns today. Find a shamrock for luck and keep smiling at the sun.

Our family tree does have a wee bit of the Irish in it, so I’ll definitely be wearing my green today. My shamrock plant is really looking a bit worse for wear these days. The pictures are from when I first got it several years ago. It’s been terribly neglected during these busy days of moving.
The next few days here will be more busy ones as we continue to finish cleaning up and clearing out at the old house. Next week will be the final closing there. The new place is slowly but surely looking like home. My spare room however looks like a storage unit with much to unpack yet. On the bright side I can take my time to do that. No rush at all. I’m looking forward to returning to life in the slow lane.
I received some really good news yesterday. My oldest son finally got a diagnosis and is now undergoing treatment. It took them quite awhile to figure out what was wrong, but thankfully they did. It’s supposed to be 100% treatable and I’m praying for a complete and speedy recovery.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
National Corned Beef and Cabbage Day. You may be surprised to learn, that Corned Beef and Cabbage is as American as Apple pie. It was created by Irish people. They just happened to be immigrants to the U.S. A traditional recipe in Ireland was salt pork or a bacon joint with cabbage and potatoes.
CROCKPOT CORNED BEEF AND CABBAGE
1 corned beef brisket, 3 to 4 lb.
1 large head cabbage
8 peppercorns
6 cloves garlic, peeled
4 parsnips
1 turnips
2 bay leaves
1 pound carrots, peeled
6 large potatoes
1 stalk celery, very thinly sliced
3 whole cloves
1/2 tsp. Old Bay seasoning
1/4 tsp. black pepper, ground
Wash brisket. Using a small sharp knife, cut tiny X slits in the meat and insert garlic and cloves pieces.
Place the meat in a large Crock-Pot and cover with water. Add bay leaves, peppercorns, Old Bay, 2 carrots and sliced celery.
Heat on high for 30 minutes. Skim off any foam that surfaces and set heat to low.
Meanwhile, prepare vegetables. Quarter the cabbage, peel potatoes, carrots, turnips and parsnips. Slice vegetables into 2 inch chunks.
During last few hours, add remaining vegetables and continue to cook for 2 or 3 hours, or until vegetables are tender. Remove bay leaves and discard.
Serve with yellow mustard.
Total Cook Time: 5 to 8 hours on low, or until meat and vegetables are tender.

How ironic, I was born on St. Paddy's Day but have never eaten corned beef and cabbage! (Or green beer ... but I don't care for beer anyway, so that's a moot point.)
How wonderful that your son's physicians have discovered what's going on! I'm joining you in prayer for his speedy recovery.
Yea with the good news about your son! Knowing what you are dealing with and then knowing there is treatment for it is a good thing indeed! Slow and steady indeed will have your extra room cleared of boxes :)
