Today is April Fool’s Day! Traditionally, April Fool's Day is an opportunity for playing jokes or tricks on one another. The stranger and the more absurd the better. The challenge is to carry out a trick that is believable, if only for a little while. Tricks are most successful if played earlier in the day before a person is wise to what is going on.
Jokes and gags must be harmless and fun. They must not be dangerous or hurt anyone's feelings. Give your jokes and gags some thought before carrying them out. Then, have fun!

The April Fool joke around here is mostly about the weather. After a few warmer days we are cooling back down. Temps in the 40’s seem to be the new trend with some getting down in the 30’s as well. We’ll be pleasantly surprised in the next few days if we see 50 degrees at all.
I found a cute recipe to try out today. These are so believable, you might just fool your friends and family at dinner. Better yet, they are also delicious.
April Fools’ Day Meatloaf Cupcakes with Mashed Potatoes Frosting
Meatloaf
2 eggs, beaten
2lb lean ground beef
1 cup bread crumbs
1 small red onion, finely chopped
1 tablespoon coarsely chopped parsley
2 cloves garlic, finely chopped
2/3 cup ketchup
2 teaspoons Worcestershire sauce
Salt and pepper
Mashed Potatoes
6 large potatoes, peeled, cubed
1/4 cup herb butter
1/4 to 1/2 cup milk
Salt and pepper
Heat oven to 350°F. Spray 18 regular size muffin cups with cooking spray or use cupcake liners. In large bowl, mix Meatloaf ingredients until well combined. Divide mixture evenly among muffin cups, pressing mixture down firmly.
Bake 35 to 40 minutes or until meat thermometer inserted in center of loaves reads 160ºF. Cool slightly in muffin cups.
While loaves are baking, in 3 quart saucepan, place potatoes in generously salted cold water. Heat to boiling. Reduce heat; cook potatoes until fork tender. Drain; return to saucepan. Add butter and 1/4 cup milk; mash until creamy and smooth, adding more milk as necessary. Season with salt and pepper. Make sure mashed potatoes are creamy and smooth so they can be piped onto meatloaves.
Place potatoes in 10 inch decorating bag without tip. I use a sandwich bag and just clip of the corner at one end. Starting at outside of loaf and in circular motion, pipe potatoes onto each meatloaf. If desired, garnish with additional parsley . I’ve also seen some potatoes with food coloring added to make them look more like frosting. Remove from muffin cups and enjoy.
Sounds like a treat to me!

That does sound like a delicious recipe; I'm going to try that out! I always remember all the April Fool's jokes we have played on the kids and them on us, especially when we would remind them that it was April Fool's Day, but they always were surprised with the jokes we did.
