Today is National Jelly Bean Day which is a time to enjoy gobs and gobs of jelly beans. Anyone who loves jelly beans, knows they are not just for Easter. Sure, they are very popular at Easter. But, they are also enjoyed year round. The flavors are limited only by the imagination of candy makers.
Jelly beans date back to at least the 1860's. Advertisements promoted sending jelly beans to Union troops fighting in the Civil War. The original candy maker is unknown.
The tastiest way to celebrate Jelly Bean Day is by eating lots of jelly beans!

Jelly beans always remind me of Easter but they are good any time of the year. It seems I always have some on hand. But the most popular place to put jelly beans though is still in an Easter basket. Easter was very early this year and has come and gone, but the jelly beans remain. For that matter so does that meaning of Easter.
My faith is such an important part of my life and the Jelly Bean Prayer that I’ve included in today’s is a reminder of why we celebrate Easter.
It would be wonderful if we could just love people for what they are and not their color or shape. We need to love people for who they are and not what we want them to be. To love with out conditions means giving love without expecting anything in return.
It’s so hard for me to believe that it is Friday once more. It used to be my favorite day of the week because I was so filled with anticipation of the weekend ahead. Now I no longer work and every day has become one to celebrate. I wish I had learned the lesson of every day being a day to celebrate years ago. Every day is a gift!

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Jelly Bean Cake
Adding festive jelly beans to this moist, delicious cake brings color and sweetness to any celebration.
2 cups flour
3/4 cup jelly beans, chopped (not licorice)
1 cup sugar
1 cup butter, softened
8 ounces cream cheese, softened
1 teaspoon vanilla extract
3 eggs
1 1/2 teaspoon baking powder
1/4 teaspoon salt
powdered sugar
Preheat oven to 325 degrees F. Grease and flour a fluted tube pan or angel cake pan.
In small bowl, toss the jelly beans with 2 Tbsp of the flour. Set aside.
In large bowl, beat together the sugar, butter, cream cheese and vanilla until well blended. Add eggs one at a time, beating well after each addition.
Add remaining flour, baking powder, and salt. Blend well. Spoon 1 cup of the batter evenly in the bottom of the prepared pan. Stir jelly beans into remaining batter and spoon into pan.
Bake for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Invert on serving plate. Cool completely. Sprinkle with powdered sugar.

What a colorful jar of jelly beans in your post, Ma. I like the Jelly Bean prayer too. They are such a delicious treat; might have mentioned it before but my mom's favorite flavor of them was the black licorice ones.
So true how every day is a gift. It does seem the older I get Fridays roll around so quick. I remember Tuesdays used to drag for me but now every day just seems to fly by.
