Today is Administrative Professionals Day which highlights the important role of administrative professionals in all sectors of the modern economy worldwide. It is on the Wednesday of Administrative Professionals Week, which is on the last full week of April.
This used to be known as Secretaries Day. The association's name was changed to Professional Secretaries International in 1981 and, finally, the International Association of Administrative Professionals (IAAP) in 1998. These changes in name reflected the changing nature of the tasks, qualifications and responsibilities.
Administrative Professionals Day recognizes and celebrates the work of secretaries, administrative assistants, and other office professionals for their contributions to the workplace.

I always try to recognize this holiday because I was a secretary and an office manager for many years. My duties were varied and many. I was a member of Professional Secretaries of America for many years and I’m thankful for the jobs I had during all the years I worked. Now I work at being a Professional Keeper of the home. Ha !
Being professional means to Be Courteous, Be Tactful. To Be Respectful, to Be Objective and Have Good Manners. It means Being Punctual, Being a Good Listener and being Honest. Professions must Be Integral, Have Good Hygiene, Show Self control and Be Patient. Professionals should Be Fair, Be Gentle, Be Presentable and Be Competent.
Professionals are Able, Ethical and Responsible. They should Be a Good Learner, Be Studious, Optimistic and Tidy.
And the list just goes on and on. Being professional seems to be a tall order. However, this list of professional attributes is quite ideal. Truthfully, each of us is a work in progress, and not many among us can claim all of these qualities to be our own,
These are goals we could all work toward. I know I’m definitely a work in progress.
The lilacs have just begun to bloom here and the tulips will soon be fading, so I took some pictures to share with you before they are all gone.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is Prime Rib Day which is a feast day in honor of this classic cut of the finest beef. It is best celebrated with great enthusiasm, with family and friends gathering to enjoy the occasion. Many restaurants also provide special menus in celebration. Prime rib, also known as ‘standing rib roast’ is located between the eighth and twelfth rib, on the upper back of the cattle.
Prime rib is best cooked on a low, slow heat, with the meat standing on the bones, so that it does not touch the roasting pan, thus ensuring its succulence. The top of the rib bones can be removed to make carving easier. Also popular on the barbecue, this delicacy is great when served with fully loaded baked potatoes or fries, mushrooms, and onion gravy.
This recipe makes 12 servings
1 whole Rib Eye Roast, About 14 Pounds
4 Tablespoons Olive Oil
1/2 cup Kosher Salt
4 Tablespoons Peppercorns
3 sprigs Rosemary
3 sprigs Thyme
1/2 cup Minced Garlic
Preheat oven to 500°F
Cut rib loin in half, roast halves separately for more controlled/even cooking.
Sear both halves in olive oil over very high heat until nice dark golden color. Make a rub mixture by placing peppercorns into a bag, crush pepper corns with a rolling pin. Strip the leaves from the rosemary and thyme springs. Mix salt, crushed peppercorns, rosemary leaves, thyme leaves and garlic.
Pour olive oil over the rib loin and pour on the rub mix. Pat slightly to get it to stick to the meat. Roast for 20 to 30 minutes at 500 degrees, then reduce heat to 300°F and roast for another 20 to 30 minutes or until a meat thermometer registers 125 for rare/medium rare. The roast will continue to cook slightly after removing from the oven.
NOTE: If you'd like the meat more cooked, leave it in the oven longer. Just keep an eye on the meat thermometer and don't let it cook past medium rare! Using a meat thermometer is very important to ensure you cook the meat to your liking.
Remove from oven and let rest at least 20 minutes before slicing.
You can buy half this quantity of meat and just proceed with the preparation instructions

Such pretty flowers :)
I remember when I was working as a secretary we always got something special on this holiday; flowers or a lunch out, etc. It was a nice recognition.
That recipe for prime rib looks good. I made a roast the other day in the crock pot since the family was coming over for dinner. Slow cooked all day make it so tenderly delicious.
