Today is National Strawberry Day which pays homage to one of the mast popular fruits in the world. Strawberries are the first fruit to ripen every year, so they are often called the taste of Spring. The bright red juicy berries are both delicious and incredibly good for you, Each bite is packed with vitamins, antioxidants, and fiber.
People have been enjoying strawberries and their healthy benefits for centuries. In fact, the Ancient Romas believed that strawberries could cure fevors, fainting, inflammation and serveral ather ailments. They also used the berries for teeth whitening.
To celebrate today, enjoy a fresh bowl of strawberries and cream, a strawberry smoothie, a piece of toast smothered in strawberry jam, or a scoop of strawberry ice cream.

I happen to have some strawberries on hand so will be celebrating today by having some for dessert. The nice thing is that no matter what the season they always seem to available at the grocery store.
I always have some strawberry jam in the fridge too and love it as a topping on some ice cream. Today I’ll have my ice cream topped with fresh strawberries.
Thankfully I was able to get the 2nd dose of the vaccine yesterday. I got the shot and a new certificate and good news, no aftereffects either. I feel just fine.
It’s also my day to cook for the weekend and I’ll be fixing:
Cacciatore Chicken Breasts
Makes 2 servings
1/2 onion, sliced and separated into rings
1 medium green pepper, sliced
1 tbsp. olive oil
2 boneless chicken brests, halved
3/4 cup canned stewed tomatoes
2 tbsp. chicken broth
1/4 tsp garlic salt
1/4 tsp.dried rosemary, crushed
1/8 tsp pepper
In a large skillet, saute onion and green pepper in oil until crisp tender. Remove and keep warm. Cook chicken over medium high heat until juices run clear, 4 to 5 minutes on each side. Remove and set aside.
Add the tomatoes, broth, garlic salt, rosemary and pepper to the skillet. Stir in onion mixture and heat through. Serve with chicken.
Serve with rice or noodles.
Our temps are to be in the 50’s and 60’s this weekend. It’s really warmed up, but rain has also moved in. Remember no matter the weather we can always make our own sunshine !
