IT’S FINALLY FRIDAY !!

It was another cold one last night down in the 20’s and tonight they say down in the teens!
I am wearing the layers and trying to keep warm for sure.
The boss will be out of the office til afternoon today, so I’m taking some tomato soup and crackers for lunch time as I won’t get to go out. Something about soup just seems to warm us up, doesn’t it? DS#6 has been asking for a Bean Soup Recipe so I’m going to post it here this morning. I’ve made soup for years without recipes but I found one for him that seems to be close to what I make.
1 pound dry beans 1/2 pound chopped ham
(or one meaty ham bone)
8 cups water
1/4 cup ketchup
12 baby carrots
salt and pepper to taste
1 cup chopped onion
In a large bowl, combine the beans with water to cover and let soak overnight. This is not the water you cook them with unless you wish to. In a large pot over medium high heat, combine the soaked beans with water, carrots, onion and ham. Add more water to cover all, if necessary. Bring to a boil, then reduce heat to low and let simmer for 4 to 6 hours. Add ketchup just to get desired color. Season with salt and pepper to taste
*I use regular carrots and dice them, but using the baby carrots might be easier. I use great northern or navy beans, and I also chop up a couple stalks of celery in mine. I’ve never used the ketchup but it sounds like a good idea.
**Another tip I saw is to add 2 bay leaves.

These beautiful flowers are recognized as a symbol of Christmas. Poinsettia Day was pronounced as an Act of Congress. It is in honor of Joel Roberts Poinsett, who died on December 12, 1851. Poinsett was the first Ambassador to Mexico who brought the plant back to his plantation in the U.S. He grew the plants in his Greenville, S.C plantation and gave them out as gifts to friends.

In Charles Dickens’ A Christmas Carol, the central character is Ebenezer Scrooge. Years of watching the travails of Scrooge have spoiled something for me though—the name “Ebenezer.” I have associated it with Scrooge, but its original meaning was light-years away from that. In 1 Samuel, following a decisive battle with the Philistines, the Israelites erected a stone as a reminder of the Lord’s help in the battle. They named that stone Ebenezer, which means “Stone of Help,” to remind people of how God rescued them from their enemies
What a contrast! A name that I had come to associate with man’s selfishness can actually serve as a reminder of the readily available help of God. As we move through life, may we focus on the faithfulness of the Lord and not the selfishness of man. Let’s look to Him as our true Ebenezer—our help in the challenges of life
