January 23rd is Pie Day! Everybody loves pie, probably one of the greatest and most versatile foods known to mankind. Sweet, savoury, filled with gravy or sauce, pies come in all shapes, sizes and flavours. Why not celebrate this Pie Day by making a pie from scratch, using your favorite fillings
Impossible Coconut Pie
2 cups milk
4 large eggs
3/4 cup sugar
1 1/2 teaspoon vanilla
1/2 cups baking mix/ flour
1 cup flaked or shredded coconut
1/4 cup margarine or butter, softened
Heat oven to 350 degrees. Lightly butter a 9 or 10 inch pie plate. Whiz everything in the blender about 15 seconds.
Bake in a 350 degree oven until golden brown and knife inserted in center comes out clean, 50-55 minutes.
Refrigerate any leftover pie.

I do love pie and have a good pie crust recipe but for just me it seems a waste to go to all the trouble so I often make Impossible Pies using bisquick baking mix. And turning the oven on these cold days is a good thing too.
Even though its been terribly cold out, we have had some days of sunlight shining too. They say we won’t be much warmer at all next week either. I don’t know if we’ll see much sunshine or not but I’m determined to make my own. The other day I visited one of our local goodwill stores. Looking around there always makes me smile. I also stopped at a few antique stores on down the road…that made me smile too as most antiques look like things I grew up with. I found this colorful tablecloth and placemats and even a new pin up lamp for by my kitchen sink…brightening up my space helps when you have cabin fever for sure. Oh and I found two adorable little crocheted doilies too that I thought would make good mug rugs.

I have counted at least 3 things every day that I'm thankful for this past year and have now reached my 1000 gifts. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.
1340. for antiques, especially old linens
1341. for pies, any kind will do, but coconut cream is a favorite
1342. for a little sunshine when it’s so very cold out
Enter into His courts with thanksgiving — and in His presence is fullness of Joy!

Please pray for God's protection of

Nice things you found at Goodwill, Ma! Always fun to go in and look around to see what one might find there. Interesting recipe for the coconut pie, but I do like the fact today is Pie Day! Might have to go and pick one up to share with the family tonight!

Love the vintage linens and pot holders Pam. You know I adore these things. You never know what you will find in a charity shop. I have found some really nice gems. Love that impossible pie. It's one of my favourites! I love the idea of a National Pie day! Scrummo! xxoo
