If you can't see the Bright Side, polish the dull side
Every once in a while, you come across a special day that just doesn't seem to have any rhyme or reason. Today, Bean Day, appears to be one of those days. Bean Day is day of unknown origin, and unknown cause. However when checking out my trivia for today, I did see that in many countries, Three Kings Day, usually celebrated on January 6th, is a traditional time to bake a traditional King Cake with a lucky bean inside! Whoever finds the bean is the king of the feast.
THOUGHT FOR TODAY
With the weather being so cold and getting colder here, I think I’ll celebrate by making a pot of bean soup. I have a ham bone left from my Christmas ham to cook with the beans too. I did find a King Cake recipe to share with you and you’ll find that below.
King Cake recipe
1 cup molasses
1 teaspoon baking soda
3 tablespoons butter
1/2 teaspoon salt
1 teaspoon ground ginger
1/2 cup boiling water
2 1/4 cups flour
Mix molasses, baking soda, and butter in a large bowl. Add salt, ginger, and boiling water. Stir well and gradually blend in the flour. Stir until smooth. Pour into a buttered and floured 8 or 9 inch square cake pan. Bake at 350 degrees F (180 degrees C) for about 30 minutes, or until cake tests done. It’s a good idea wait until the cake is baked and then insert a bean. It can get mushy if baked along with the cake. Cool and frost cream cheese or fudge icing.
I’ll be praying for all today that the power stays on, the roads stay clear and that everyone is safe and warm in this storm.

COUNTING MY GIFTS
I have counted at least 3 things every day that I'm thankful for this past year and have now reached my 1000 gifts. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.

I think that's a good idea to have made soup on a day like today where I hear lots of the country are experiencing bitter cold. Soup always has a way to warm up one's tummy! Cute tradition with the king's cake with the bean in it; could be a fun one to start with a young family!
I do hope your power stays on Ma and you are as warm as you can be!
