Ready to get things popping? It's time to celebrate one of our favorite treats of all time! January 19th is National Popcorn Day. Pop yourself a delicious bowl of popcorn and celebrate!
Basic Popcorn
1 tablespoon canola oil
1/2 cup popcorn kernels
3 tablespoons unsalted butter, melted
1/2 teaspoon salt
In a large saucepan, stir together the oil and popcorn kernels. Cover and cook over medium heat just until you hear the kernels begin to pop, 3 to 5 minutes. Tilt the lid slightly, allowing steam to escape. Cook until the popping slows, about 2 minutes. Remove from the heat and let stand until the popping stops, about 30 seconds. Drizzle the popcorn with melted butter and mix to coat. Sprinkle with salt and mix again.
The calories are in the topping and not everyone likes to salt their food so if you are eating healthier, no salt and no butter…pop corn still makes a delicious snack.

I’ll admit that usually I eat microwave popcorn. But if you haven’t tried it…homemade popcorn is delicious. In honor of the day I found myself digging out the popcorn and making a panful for myself…mmmm good! I ate every last buttery mouthful.
When the babes were young, it was a favorite evening snack. It’s still one of mine and believe me when I say I’ll be making more on the stove from now on.
I have found that most anything homemade is much better. I rarely eat out and enjoy my own cooking so that is ok with me. There are few things though that I do like better than what I make. I like McDonalds Bacon Egg and Cheese Biscuits and also their fish sandwiches. I love Red Lobsters coconut shrimp and cheesy biscuits too. Otherwise I’ll take homemade. DD did make some that were very close to Red Lobsters last year for my birthday though and they were delicious.
The Parable of the Popcorn
Behold at the time of harvest the ears of corn did bring forth kernels, which were dried and prepared for the popper's hand. And then it was that the popper did take the kernels, all of which did appear alike unto him and did apply the oil and the heat. And lo, it came to pass that when the heat was on, some did explode with promise and did magnify themselves an hundred fold, and some did burst forth with whiteness, which did both gladden the eye and satisfy the taste of the popper.
And likewise, some others did pop, but not too much. But lo, there were some that did just lie there and even though the popper's heat was alike unto all, they did bask in the warmth of the oil and kept everything they had for themselves. And so it came to pass that those which had given of themselves did bring joy and delight to many munchers, but those which kept of the warmth, year, and did not burst forth were fit only to be cast out into the pail and were thought of with hardness and disgust.
And thus we see that in the beginning all appear alike, but when the heat is on, some come forth and give their all, while others fail to pop and verily become like unto chaff, to be discarded and forgotten.

I haven't had homemade popcorn in a bit, Ma, it sure sounded good! And you are right, popcorn by itself without a lot of topping is not that bad of a snack. We too used to have a lot of it as snacks when I was growing up. Always enjoyed how the house smelled after it had been popped.
I do agree that homemade seems to taste better than store bought or sometimes out at restaurants. I also do agree though that Red Lobster's biscuits are very tasty indeed!

Oh, I just adore popcorn Pam, but I only ever rarely eat it these days. I always end up with a sore mouth afterwards because of the husks. I wish someone would invent huskless popcorn!
Happy memories of popcorn night with my kiddos and the old hot air corn popper we had. Good times!
Homemade is always better in most cases although I do admit to having a liking for McDonald's Egg McMuffins, but only because their muffins are always softer than the Ones I have at home. If I could crack that I would make them at home coz I know they would be better. xxoo
