There are a lot of Millionaire recipes to make, but I’d never heard of Millionaires shortbread, so I thought I’d look it up and share the recipe with you.
Millionaires Shortbread
makes 12 servings
Shortbread crust:
1 1/2 cups flour
1/2 cup butter, cut into small pieces
3 Tbsp. brown Sugar
Caramel:
1 14 oz. can sweetened condensed milk
4 Tbsp. butter
3 Tbsp. brown sugar
Topping:
6 oz milk chocolate, chopped
Preheat the oven to 375 degrees. Grease a 9 inch square pan.
Sift flour in a bowl. Rub in butter with your fingertips until the mixture resembles fine bread crumbs. Mix in brown sugar and shape dough into a ball.
Press dough into the prepared pan. Prick all over with fork.
Bake in the preheated oven until set and golden brown, about 20 minutes. Let cool.
Meanwhile combine condensed milk, butter and brown sugar in a nonstick pan over medium low heat. Cook, stirring constantly, until caramel comes to a boil. Reduce heat and cook until golden and pulling away form the sides of the pan.
Pour caramel over cooled crust and refrigerate until firm to the touch.
Place chocolate in top of a double boiler over simmering water. Stir frequently, scraping down sides with a rubber spatula to avoid scorching, until chocolate is melted.
Spread melted chocolate over cooled caramel. Refrigerate until chocolate hardens, Cut into bars and serve

Fishamajig Super Melt Sandwich
This is essentially a grilled cheese sandwich with fried fish and tartar sauce in the middle.
I first had this sandwich at our local Friendly’s restaurant, but sadly they are no longer open in our town. But the good news is I can make one of my own. I will use fish sticks on mine and enjoy it very much.
The good news yesterday was that my granddaughter was released from the hospital and is now at home. Thank you all for your kind thoughts and prayers. They were able to treat her viral infection successfully.
It’s supposed to be one of those unusual 90 degree days here in Ohio today. It’s going to feel like summer and I’ll probably have to put the a/c on. I’ll be enjoying some time on the porch soaking up the warmth ! I do have a fan out there so it won’t get too warm.

How often I used to dream of winning a million dollars and go on a mad spending spree. Better, as you said, to appreciate what I've been given. I'll never forget my mother pointing out a photo spread of the uber wealthy frolicking at the French Rivera ... not a one with a smile on his or her face.
The last couple days our temps hit 90-91. Coupled with the humidity, Tom and I really felt it. Hopefully, we'll have some rain in the coming week to cool down a bit.

I did not know that about Astor. I did know the old rich guy was on the Titanic though.
I did have that dream once, to become a millionaire. My business and Sherry working we actually came close, but heeding my wife's advice, settled for love and travel. I am still sure WE made the right decision. Sorry to be later but we had no internet most of the day.
