I keep in touch with my loved ones every day. Some are close by and I visit them regularly, but most are far away and I hardly ever see them. So I will definitely be celebrating today and will keep in touch with them.
This son and his wife live in Ohio, but not close by so a card will be going out to them full of best wishes for a happy anniversary and lots of love.
The first picture today shows DS#3 and his wife with their son graduating from High School. This year their oldest son graduated from college and we are very proud of him.
I’m back to my regular activities now and on Wednesday’s I cook up something new.
On the menu for today is:
Creamy Dijon Chicken
Makes 4 servings
1/2 cup half and half cream
1/4 cup Dijon mustard
1 Tbsp. brown sugar
4 boneless skinless chicken breasts, halved
1/4 tsp salt
1/4 tsp pepper
2 tsp.olive oil
2 tsp butter
1 onion, halved and very thinly sliced
minced fresh parsley
Whisk together cream, mustard and brown sugar. Pound Chicken breasts with a meat mallet to even thickness and sprinkle with salt and pepper.
In a large skillet, heat oil and butter over medium high heat, brown chicken on both sides. Reduce heat to medium. Add onion and cream mixture, bring to a boil. Reduce heat, simmer covered until thermometer inserted in chicken reads 165 degrees. Sprinkle with parsley.
I will have this with a side of noodles and some candied carrots today.

Friday - Crispy Fish Taco Bowls
Weekend - One Pan Cilantro Lime Chicken
We are supposed to have off and on rain showers today, so chances are that I might get wet today when doing my shopping, but the good news is that I have a handy umbrella in my car.
On the bright side it is no longer cold outside so that is a plus!

Happy anniversary to your son and wife. They have a beautiful family. I read the first part to Sherry. She said well that is true Jack Jr is coming over to see us today and Mark is driving up to NC to see his family. LOL

Happy anniversary to your DS#3 and pretty bride! I never thought of adding Dijon mustard to chicken, but it sounds tasty. We're having chicken, too, but done out on the grill. THey say we're supposed to hit the 90's this week so I'll be using the stove/oven sparingly.
