Decide to be happy today, to live with what is yours – your family, your business, your job, your luck. If you can’t have what you like, maybe you can like what you have.
Just for today, be kind, cheerful, agreeable, responsive, caring, and understanding. Be your best, dress your best, talk softly, and look for the bright side of things. Praise people for what they do and do not criticize them for what they cannot do. If someone does something stupid, forgive and forget. After all, it’s just for one day.

I'm looking out the window and the day is drab and dreary, And I'm trying to console myself by thinking something cheery I know it's simply horrible to get in such a slump And I also know it's up to me to get across the hump And I realize I'm selfish to mention this to you For, gee, you might be feeling a little 'low-down' too but often when I feel like this I tell myself it's true That I am not the only one who feels 'low-down and blue' And just knowing there are others who feel the way I do Renews my sinking spirit and keeps me smiling through and know that it's natural to take a 'spirit-dive' Provides the spunk and courage to hang on and survive And while there are a lot of moods that we can drive away by looking on the BRIGHT SIDE in all we do and say, There also is a loneliness that God meant us to feel But, gee, it sure is mighty hard to know which one is real And I'd hate to be a 'sad sack' who never saw the sun And just complained that every day was such a dreary one. But I know that all the dark days are just part of God's plan We should accept them graciously and do the best we can... So I'll just keep on trying for I know it's 'Gospel true' there never was a cloud so dark the sun could not shine through!

I send this little letter out each morning to all my family and friends and even to a few people that I've never met. Many of them send it on to others too. So in order to make it available to more people I post the 'brighter side' of the news here each day in this journal. Today is Eat What You Want Day which is the day to ignore your diet and indulge in the foods you love most. Spread the word about the unique holiday! While junk food is certainly acceptable today, don’t forget to include your favorite meals as well. Perhaps you’d like to recreate Thanksgiving dinner or a childhood classic like mac and cheese and pigs in a blanket.
Dieting is a relatively new phenomenon. Our ancestors were concerned with getting more carbohydrates and fats into their system, not less. The first fad diet programs appeared in the U.S.during the 19th century and today people are still trying all sorts of crazy things to lose a few pounds.
To celebrate today, eat al your favorite healthy and not so healthy foods in moderation. We hope you enjoy every bite.

I don’t diet but do try to eat healthy foods so that I can be healthier. I do believe that keeping things in moderation is a good way to live. A little bit of something sweet can go a long way and better that not having it at all.
Today is my day to cook and on the menu today is one of my favorites:
Wild Rice Mushroom Soup
Makes 4 servings
1 Tbsp. Olive oil
1 cup thinly sliced celery
1 cup chopped carrots
1/2 cup chopped onion
8 oz. button mushrooms, sliced
1/4 cup flour
1/2 tsp. ground pepper
1/2 tsp. salt
4 cups vegetable broth
2 cups cooked wild rice
1/2 cup heavy cream
2 tsp lemon juice
2 Tbsp. chopped fresh parsley
Heat oil in large saucepan over medium heat. Add celery, carrots and onion and cook stirring, until starting to soften. Add mushrooms and cook, stirring until mushroom liquid has mostly evaporated. Add flour, pepper, and salt and cook stirring 2 minutes more.
Add broth and bring to a boil, scraping up any browned bits. Cook, stirring until slightly thinned. Stir in rice, cream, lemon juice and parsley and cook until heated through.
Serving size is 2 cups
Although it’s to be around 80 degrees out today, I think a bowl of soup still sounds good. I like it no matter what the weather.
I’m not going to do my grocery shopping today because tomorrow I’m going to DD’s for a few days . No one will be here to do any eating, so it’s best I don’t get in anymore food.
My eye surgery went well yesterday and I had to wear a eye sheild yesterday and overnight, but not today. I’m allowed to resume my normal activities except I’m not to lift anything heavy. On Friday, I’ll go back to the doctor for a follow up apppointment to see how I’m doing.
