Today is National Nurses Day which is the first day of Nurses Week . It begins May 6th and ends on May 12th, Florence Nightingales’s birthday. Today we celebrate the meaningful work that nurses do every day, and especially recently during the global health crisis.
In 1953, Dorothy Sutherland, an employee at the United States Health Department, sent a letter to President Eisenhower to recommend a National Nurses Day. Although Eisenhower did not make an official proclamation, people began celebrating Nurses Day the following year. Twenty years later, President Nixon made it an official holiday.
Remember to thank all the nurses in your life for the amazing work and dedication.

One of my granddaughters, #1, is a nurse so I’ll be celebrating to day in order to honor all that she does. I’m very proud of her. She has recently been posting on FB about how underpaid they are. I know she’s not alone. Teachers and Nurses should both be paid more than they are. When sports stars get paid more than they do, something is wrong. I hope that in the future they are valued more.
Today I’m baking the chalice cake for our Cutie Patootie’s 1st communion tomorrow. She requested a chocolate cake and chocolate frosting. It’s also my day to cook something new and on the menu today is:
Fast Baked Fish
Makes 4 servings
1 1/4 lbs. fish fillets
1 tsp. seasoned salt
Pepper to taste
Paprika, optional
3 Tbsp. butter, melted
Preheat oven to 400 degrees. Place fish on a greased baking dish. Sprinkle with seasoned salt, pepper and if desired paprika. Drizzle with butter.
Cover and bake until fish just begins to flake easily with a fork, about 20 minutes.
The best fish to use is a flaky white fish such as tilapia, halibut, cod, bass, grouper, haddock, catfish or snapper. White fish doesn’t mean it is white in color, rather it is a mild flavor fish that cooks quickly and seasons well. Because the fish is delicate and cooks quickly, flipping the fish isn’t always necessary.
You could replace the season salt with Old Bay seasoning if desired. I like a wedge of lemon with my fish. It really adds to the taste. I’ll be having some oven roasted potatoes and a side of coleslaw with mine.

I know your family is proud to that Nurse. We too are proud to have two nurses in our family. We are proud of both.
I bake fish very close to your recipe and we love em. We have started using a Swai fish. It has a very mild taste for sherry's Fish stew also.

I agree, nurses' dedication and expertise can't be heralded enough! My own mother was an R.N., but I never felt led to follow in her footsteps. To tell the truth, I'm squeamish and often find it hard to remain calm in stressful situations. I'm enormously grateful for those professionals like your #1!
