Today is the Kentucky Derby which is traditionally held on the first Saturday of May. In past years, over 150,000 people have gathered in Louisville, Kentucky to witness the most exciting two minutes in sports. Today, a group of three year old thoroughbred horses will race for the chance to win the second jewel of the Triple Crown.
It’s an occasion famous for its extravagant hats, mint julep cocktails and general pomp and circumstance
This history of the Kentucky Derby is as exciting as the race itself. In 1863, Colonel Meriwether Lewis Clark attended the Grand Prix de Paris horserace in Paris. Inspired by what he saw , he returned to America and organized the construction of a beautiful new horse racing facility for the Louseville Jockey Club. Today we know it as the Churchill Downs. The first Kentucky Derby race took place at the track in 1875.

You can’t win the Kentucky Derby unless you’re a throughbred .

We don’t have any horses and not a lot of extravagant hats here to show today, but I do intend to watch the derby, providing it is televised. I just hope the track is not too muddy. The pictures today are from other 1st communion parties I’ve been to.
We are going to have a party in our family to go to today and thankfully we are to get some breaks in the rain. It poured here all day yesterday. And tomorrow, Mother’s Day it will be sunny and warmer too.
It would normally be a day to cook for the weekend for me, but I’ll probably put it off until tomorrow as I have church and the party to attend.
On the menu for today is:
Buffalo Chicken and Cauliflower Casserole
8 cups cauliflower florets
2 Tbsp olive oil, divided
1 1/2 cups chopped onion
1 cup diagonally sliced celery
1 cup chopped scallions, divided, plus more for garnish
1 1/2 cups milk
12 oz. cream cheese
3 cups shredded cooked chicken breast
1/4 cup plus 1 Tbsp. hot sauce
1 tsp. paprika
1 tsp. garlic powder
3 Tbsp blue cheese, crumbled
Preheat oven to 425 degrees . Line a large rimmed baking sheet with parchment paper.
Place cauliflower on the baking sheet and drizzle with 1 Tbsp. oil, toss to coat well and spread in a even layers. Roast until tender, about 15 minutes. Remove from oven. Reduce temperature to 375 degrees.
While cauliflower roasts, heat remaining Tbsp.oil in a large skillet over medium high heat. Add onion and celery. Cook, stirring often until vegetables are softened . Stir in 1/2 cup scallions, cook stirring until softened. Add milk and cream cheese, stirring constantly until the mixture is thickened and smooth. Remove from heat.
Add the roasted cauliflower, chicken, hot sauce, garlic powder and the remaining scallions to the skillet. Stir until well combined. Coat a baking dish with cooking spray. Spoon the cauliflower mixture into the baking dish. Sprinkle evenly with blue cheese. Bake until the mixture is bubbly and the cheese is melted. Garnish with extra scallions, if desired.
I don’t have blue cheese here so will substitute with mozzarella . and I’ll cut the hot sauce in half as I like my food mild. At little of that goes along way.

It's so nice to see the sun come out here today. I'm celebrating and the sun makes me smile !
Nice picture of you and your little guy. Never got into watching the Derby but have enjoyed seeing all the hats.
I have always loved horses. Never attended a Kentucky Derby but it always makes headlines. I had no idea it was as old as it is.

Derby Day used to be 'appointment television' -- all the races, actually -- until the first time I witnessed a horse go down. Now I can't bear to watch until Tom lets me know it's over. And even tho' I've never spent time there, I get misty-eyed when everyone stands and sings, "My Old Kentucky home." Isn't that silly?
I hope your family party is wonderful from the beginning to the good-nights!
