Star Wars Day is celebrated on May the Fourth as a tribute to one of the most famous Star War quotes - May the Force be with you. It is hard to pinpoint exactly when the very first Star Wars Day celebration took place. It was created by fans and it’s popularity has grown with the rise of the internet and social media. The first organized public celebration took place in 2011, and the holiday was official recognized by Lucasfilm in 2013.

We have a lot of Star Wars fans in our family so I’ll definitely be celebrating today ! The pictures today were taken at one of my grandson’s birthday parties that had a Star Wars theme. The decorations and treats were very cute and special!
It’s hard to believe another Wednesday is here already and it’s time once again for me to make up a new menu for next week so that I can do my shopping for the week.
The menu for next week is:
Monday -Wild Rice Mushroom Soup
Wednesday - Chicken Pasta Caesar Salad
Friday - Lemon - Parsley Tilapia
Weekend - Creamy Dijon Chicken
On the menu for today is :
Gluten Free Teriyaki Chicken with Broccoli
It is gluten free as long as you use tamarind, a gluten free soy sauce.
Makes 4 servings
1 Tbsp. grapeseed oil
1 lb boneless skinless chicken breasts cut into 1 inch pieces.
3 cups fresh brocolli florets
1/4 cup tamari, gluten free soy sauce
2 Tbsp pineapple juice
1/3 Tbsp. honey
1 Tbsp.rice vinegar
2 tsp. grated garlic
2 tsp. cornstarch
1 tsp. grated fresh ginger
2, 8.8 oz. pouches precooked microwaveable brown rice, prepared to package directions
1/4 cup thinly slice scallions
1 tsp. toasted sesame seeds.
Heat oil in a large skillet over high heat. Add chicken; cook, stirring often until browned and mostly cooked. Add brocolli; cook stirring often until bright green and tender.
Meanwhile stir together tamarind, pineapple juice, honey, vinegar, garlic, cornstarch and ginger in a small bowl. Add the mixture to the chicken in the pan. Cook over high heat, stirring constantly, until the liquid is thickened and the mixture is glazed. Remove from heat. Serve the chicken mixture over the rice. Sprinkle evenly with scallions and sesame seeds.
I made several variations in this recipe. I used regular soy sauce. I’m not on a gluten free diet and didn’t need to avoid it. I had no grapeseed oil so used olive oil, I also used dried ginger out of a can. I didn’t have scallions so used green onions. Still all in all it should taste good.

My best friend Sonny was a died in the wool Star wars fan, me not so much. Not sure I watched over three or four episodes. I did like a lot of possible futuristic ideas used.
We had a real power failure here in the park we were asked to move if we wanted power, decided to wait it out.... Back on this AM

I'm looking forward to your mushroom/wild rice soup recipe. Even in the warm summer months, that sounds good.
