This grandson lives close by but I probably won’t see him today as they have other plans, but I’ll soon be able to celebrate with him as they are having a party for him next weekend.
I think it would be every parents nightmare to have their child go missing. We now have Amber Alerts to let us know when a child goes missing that get the message right out to the public. I remember when they used to have milk cartons with missing children’s pictures on them.
It’s so important to know where your children are. I used to only let mine go somewhere if they had a buddy along with them. There is safety in numbers.
I used to walk my children to school and was there to pick them up too. Later on when they walked to school on their own, they had each other. No one ever walked alone.
I still don’t like going out along, but due to necessity I usually am alone, but always have my cell phone along in case of emergency.
Many children also now have cell phones, more so than ever. It’s easy to track where the are as long as they have their phone along with them.
It’s also my day to cook up something new here today and the day I make my menu for next week to do my shopping from. It’s to be a lovely day here so it will be a great day to get out and go shopping.
On the menu for today is:
Beef and Bean Sloppy Joes
makes 4 servings
1 Tbsp. Olive oil
12 oz. lean ground beef
1 cup black beans, rinsed
1 cup chopped onion
2 tsp chile powder
1/2 tsp garlic powder
Pinch of cayenne pepper
1 cup tomato sauce
3 Tbsp. Ketchup
1 Tbsp. Worcestershire sauce
2 tsp. spicy brown mustard
1 tsp light brown sugar
4 whole wheat hamburger buns, split and toasted
Heat oil in a large nonstick skillet over medium high heat. Add beef and cook, breaking up with a wooden spoon, until lightly browned but not completely cooked through. Using a slotted spoon transfer beef to a medium bowl, reserving drippings in the pan.
Add beans and onion to the pan, cook stirring often until the onion is softened.Add chile powder, garlic powder, onion powder and cayenne. Cook stirring constantly until fragrant. Stir in tomato sauce, ketchup, Worcestershire sauce and brown sugar. Return the beef to the pan. Bring to a simmer and cook stirring often until beef is just cooked through and the sauce has thickened slightly. Serve on buns.
Sloppy joes are a favorite of mine and I usually have them with some macaroni salad on the side

Monday - Traditional Barbecued Picnic Chicken
Wednesday - Quick and Easy All American Hamburgers
Friday - Very Vanilla French Toast
Weekend - Slow Cooked Pepper Steak

I'm so happy to be celebrating this birthday in person!
HAPPY BIRTHDAY to that grandson! They always brighten our days. AND It is even hard to imagine all of a sudden MISSING a child. The horrors that must generate.

Happy Birthday blessings to that good-looking young man! I can't even wrap my mind around the idea of a missing child or grandchild. So sad that we must caution even our little ones to be hyper observant. Lots of people criticize parents for giving their children expensive cell phones. But one news story a few years ago gave me faith in the younger generation. Some guy tried to abduct a little girl walking home from school. Not only was she able to successfully elude him, but had the presence of mind to whip out her phone take a picture of his license plate!
