THOUGHT FOR TODAY

I so appreciate the tree I have right here beside my house and have shown these pictures many times. It provides wonderful shade in the summer and it also shelters and feeds several animals that live around here.
It’s to be raining here today but thankfully the weekend was beautiful. Too many of our weekends have been rainy ones. I’m off to my primary care physicians today for a check up. He does this regularly due to my high blood pressure.
I’m sure I’ve gained some weight and he won’t be happy about that. I had lost over 10 lbs and I’ve gained it all back. I blame it on my inability to get much exercise. I don’t get out like I used to. What they say is true, if you don’t use it, you lose it and I done lost mine.
Oh well, we’ll see what he has to say.
Since I was gone for a few days, I’m going to pick up the menu for this week starting back where I left off on Thursday
Lemon - Parsley Tilapia
Makes 4 servings
4 tilapia filets
2 Tbsp lemon juice
1 Tbsp butter, melted
2 Tbsp minced fresh parsley
2 cloves garlic minced
2 tsp grated lemon zest
1/2 tsp salt
1/4 tsp pepper
Preheat oven to 375 degrees. Place tilapia on a parchment lined pan. Drizzle with lemon juice, then melted butter.
Bake until fish just begins to flake easily, 11 to 13 minutes. Meanwhile, mix remaining ingredients. Remove fish from oven and sprinkle with parsley mixture.
I don’t have fresh parsley so will use 1 tsp. dried parsley in my recipe.
I’ll be having this with a side of air fried french fries and some coleslaw.

I'm so thankful for the tree that grows here!
Thanks for the information on trees. Never realized the mature tree put out that much oxygen, SWEET. We have a lot of oxygen back home then. Anyway, I have planted a few trees, one I remember and drive by it every year of so and am amazed at it's growth in just 40 years. Be safe. ;-)

Funny you should mention it! Only yesterday afternoon I stood gazing at our trees and those in surrounding properties, thinking how beautiful they are. Having lived in the desert for many years (where little grows but palms) what I'm seeing is like a banquet for the eyes.
