The month of February is American Heart Month, An Affair to Remember Month, Black History Month, Canned Food Month, Creative Romance Month, Great American Pie Month, National Cherry Month, National Children’s Dental Health Month, National Grapefruit Month, and National Weddings Month.
Today is National Freedom Day which was established in 1948 by President Harry Truman to remind us that America stands for, and is a symbol of freedom for all people. The roots of this special day come directly from the end of slavery and the signing of the 13th amendment outlawing slavery by President Lincoln on February 1, 1865.
We can celebrate this day by reflecting on the freedoms that we enjoy by being fortunate enough to be in American. Millions of people in the world are not free.

I cannot imagine living somewhere that I didn’t have the freedoms I have here in our country. We are very blessed indeed and too often take them for granted.
It is wonderful to welcome a new month which will bring us closer to Spring. I am definitely counting down the days and also trying to make these winter days count for something too.
I put up some Valentine decorations in my house when I put the Christmas things away to try and brighten things up a bit. When you look out side and see nothing but white every where you look, you need something colorful for sure.
They say tomorrow is wear Red Day and red is my favorite color anyway so I’ll be wearing lots of red these cold gloomy days too. They say the color red is associated with the meaning of love, sensitivity, romance, joy strength, courage and determination. I am determined to endure these winter days with as much joy and happiness as I can.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Baked Alaska Day. Baked Alaska is a dessert made with ice cream, sponge cake and tasted meringue. This dessert originated at New Your City’s Demonico’s restaurant to commentate the purchase of Alaska in 1857.
Today’s recipe is a simplified version of this classic baked ice cream dessert.
Not Baked Alaska
1 pkg. prepared pound cake
2 cups chocolate ice cream, slightly softened
1 tup Cool Whip whipped topping
1/4 cup flaked coconut, toasted
Cut cake horizontally into 3 even layer. Place bottom cake layer on serving plate, spread with 1 cup of softened ice cream. Repeat layers of cake and ice cream. Cover the top cake layer.
Frost sides and top of cake with whipped topping, Sprinkle with coconut.
Serve immediately or store in freezer until ready to serve.
Makes 10 servings

I shall eat a broiled grapefruit tonight in honor of this day. Thanks MA.
Have to admit, the one (and only) Baked Alaska I had was much prettier to look at (set on fire) than it tasted. "Not Baked Alaska" made me chuckle, but it sounds awfully labor-intensive. Have you made it?
Always a good reminder to embrace the freedom we enjoy. Sobering to realize how many souls aren't as fortunate.
