Today is Tell a Fairy Tale Day which is a good opportunity to read to your children or grand children. If the kids aren’t around it’s ok to read them alone, because every body loves a good fairy tale. a fairy tale is traditional a short story with mythical and fantastic characters such as elves, fairies, gnomes and more. These stories are meant to enchant readers.
To qualify as a fairy tale, a story does not have to begin with... Once upon a time, but, they usually do. It is a requirement that the story has a happy ending. There's nothing better than a good story that ends with...and they all lived happily ever after.
There are countless stories to choose from. Little Red Riding Hood, Rumplestitskin, Hans and Gretel and the Princes and the Pea are just a few that have entertained children and adults for many years.

I used to be able to tell all the old fairy tales as I knew them by memory, but sadly I couldn’t do it any more. I remember traveling in the car with one of my sons and his daughter one time and telling her a story as we traveled. She was amazed at the fact that I could tell a story without having a book to read it from.
After growing up with these old tales and then telling them to my own children over and over, I didn’t need a book in front of me. But that was a long time ago, and I’d need a book to read from these days for sure. I’ve gotten out of practice.
To this day I prefer stories with happy endings and for that reason you’ll find my reading choices to be just that…they lived happily ever after.
Today is supposed to be a sunny day! Hooray! We haven’t had one of these in quite awhile and I for one am celebrating ! Sunshine is much needed here. There is nothing quite like it to make one feel better !

NEW IN THE KITCHEN
It’s National Pistachio Day! Pistachios are used cooking and are enjoyed fresh or roasted as a snack. Pasitashio Ice Cream with its distinctive green color is also popular. Pistachios have more antioxidants per serving than green tea. They are also an excellent source of fiber, copper, manganese and Vitamin B6.
I do love Pistashio Ice Cream and Pistachio Pudding Mix is a favorite too. I use it to make my family's favorite birthday cake. I know I’ve shared this recipe before but it is worth sharing again.
Pistachio Cake
1 box yellow or white cake mix
1 box instant pistachio pudding mix
1/2 cup water
1/2 cup orange juice
1/2 cup oil
4 eggs
1/4 cup chocolate syrup
1/2 cup chopped pistachio nuts for garnish, optional
Preheat oven to 350 degrees. Put cake mix, pudding mix, water, orange juice, oil, and eggs in a bowl and beat with an electric mixer for two minutes, scraping the sides of the bowl periodically.
Grease and flour a 10 inch tube pan. Pour 3/4 of the batter into tube pan and spread. Add chocolate syrup to remaining batter in mixing bowl and blend. Pour remaining batter on top of batter in pan and spread.
Bake for 1 hour or until a toothpick inserted into middle of the cake comes out clean Allow to cool about 10 minutes before removing from pan
Cool completely and then frost with chocolate buttercream frosting and sprinkle with chopped nuts if desired.

I love happy endings too! I’m reading an interesting book now and I’m trying to resist thumbing to the back to see if it has a happy ending. I won’t but it’s tempting. I really really don’t like movies or books that simply stop or that feel unfinished. I want everything tied up and done even if the ending isn’t perfect.

My grandson's favorite salad at holidays is the Watergate Salad which uses the green pistachio pudding. Very good! I loved reading fairy tales to my kids. I should get out that big, old book and read some to myself today!
I also love my happy endings! That chocolate cake looks really good, makes me hungry!!
With so much evolving and changing (Jack's post about pay phones, for example!) ... it's reassuring that fairy tales remain immortal.
Aside from peanut butter, pistachio nuts are right up there on my list of favorites! Growing up, my parents only kept 'ice milk' (v. ice cream) in the house; I treasure the memory of special times when mother and I'd travel to Baskin Robbins for a pistachio cone.
