Today is Weatherman’s Day which honors weathermen and women who work hard to accurately predict the often fickle weather. Knowing the weather is important in so many ways. It affects how we dress, where we go and even if we go.
Weatherman Day commemorates the birth of John Jeffries, one of American’s first weathermen. He as born February 5th, 1744 and kept weather records from 1774 to 1816.

THOUGHT FOR TODAY
Don’t knock the weather: nine tents of the people couldn’t start a conversation if it didn’t change once in awhile.

I know I’m guilty of bringing the weather into most every conversation. It is important to know what the weather will be. But the truth is for most of us, life goes on no matter what. For years I went off to work every day, but I’ve been spoiled since I retired and get to choose, for the most part whether I’ll go out or not.
But for the next 2 weeks, It is not going to be my choice at all. I’ve some obligations that may take me out even when the weather is bad and that is a little unsettling to me. If it snows and the roads are bad, I’ll need to plan accordingly. I may need extra time to clear the snow just so I can get out of the driveway, or I may need to leave earlier in order to arrive on time. Believe me I’ll be keeping a close eye on the weather.
I’ve decorated, and cooked and cleaned trying to get through these winter days with a happy face but still they are not easy ones for me. So far my efforts have only resulted in about 10 more pounds to carry around after all the comfort food I’ve eaten.
The picture above shows my progress on the puzzle I started this past week. It took me quite awhile just to get the border done, now the really hard part starts. I’ll be sure to show you a picture if I ever get it done.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Its National Chopsticks Day. It’s a day to make a homemade Chinese recipe and have some fun with chopsticks today.
I never mastered the use of chopsticks at all and prefer to use my fork, but I did find a recipe to share.
Chopstick Chicken
1 can Cream of Chicken soup
1 soup can of water
1 cup uncooked white rice
1 pkg. dry onion soup mix
4 chicken breasts
Salt and pepper
Preheat oven to 325 degrees . Grease a 9 by 13 inch pan with nonstick cooking spray.
Add soup, water and rice and dry onion soup mix packet to greased pan. Which ingredients together.
Heat a large skillet over medium high heat. Spray pan with non stick cooking spray. Add four chicken breast when pan is hot. Sprinkle with 4 chicken breast with salt and paper. Brown each side until the outside has started to brown slightly. You do not want to fully cook chicken.. This step is optional.
Place chicken breasts on top of rice mixture. Cover with foil and bake for 1 1/2 hours or until rice is tender and chicken is fully cooked.
Makes 4 servings

Yes, safe travels! I used to tell my son, "I'm not worried about YOUR driving; it's the OTHER guy that concerns me."
Every Sunday afternoon I check the new week's forecast so I can plan my work wardrobe accordingly. Unfortunately, we're in that time of year when I'm running my car's heater in the morning and the a/c in the afternoon. One of my blog friends posted a cute meme on her page today: (Imagine a palm tree shadow): "The palm tree saw its shadow ... 52 more weeks of summer." :)
