Today is National Tortilla Chip Day which is a day set aside for the crunchy snack loved by millions across the nation. The Tortilla chip is most commonly served with salsa, guacamole, and cheese dips. Tortilla chips are made from corn tortillas that have been cut into wedges and then fried.
A favorite dish made with tortilla chips is nachos. Nachos are tortilla chips served with melted or shredded cheese and often additional toppings are added such as meat, salsa, refried beans, tomatoes, diced onions, lettuce, and sour cream.

It’s hard to believe that it is the weekend once again. Even though this has been a very quiet week here, it went by pretty fast. I wasn’t able to do much but have taken time out just trying to feel better and slowly decorating for Spring.
I’m staying home again today, but I managed to make a grocery run yesterday and got a bag of oranges full of that instant vitamin C, that apparently I need more of. I also got a bog of lemons for making some fresh lemonade.
I can make a meal out of tortilla chips and all the toppings so I picked up the makings for this recipe which makes a casserole dish full of goodness.
Beef and Bean Taco Casserole
1 lb. lean ground beef
1 can, 16 oz. refried beans
1 jar, 16 oz, Salsa
1 package taco seasoning mix
2 1/2 cups coarsely broken tortilla chips
1/2 medium green bell pepper, chopped
4 medium green onions, sliced
2 medium tomatoes chopped
1 cup shredded Cheddar or Monterey Jack cheese
1/4 sliced ripe olives, optional
1 cup shredded lettuce
Heat oven to 350 degrees. In a 12 inch skillet cook beaf over medium high heat 5 to 7 minutes, stirring occasionally until cooked through, drain. Stir in refried beans, salsa and taco seasoning mix. Reduce heat to medium and heat to boiling, stirring occasionally.
In ungreased 2 quart casserole place 2 cups of the broken tortilla chips. Top evenly with beef mixture. Sprinkle with bell pepper, onions, 1 cup of diced tomato, the cheese and olives if desired.
Bake uncovered 20 to 30 minutes until hot and bubbly and cheese is melted. Top baked casserole with remaining 1/2 cup tomato, lettuce and 1/2 cup broken tortilla chips. Makes 5 servings.
It’s to be another day of rain with temps in the 40’s. On the bright side I see a day of sunshine in the long range forecast for Monday !

Tortilla chips ... and nachos! ... are some of my all-time favorite things in the world! Yesterday afternoon the office suddenly smelled so divine! One of our front-desk agents had ordered carne asada nachos from the on-site restaurant ... but on closer inspection there was hardly any cheese. How's that even allowed?! :)
