Today I’m saying hello and want you all to know it’s nice to have friends like you…well some may be family, but I still consider you friends too. The card in the first picture is a card I received from a dear friend of mine and it meant a lot to me that she sent it.
It’s so important to keep in touch with those we care about. Time flies and we forget to write or call. Before we know it a lot of time can goes by and we all know how that goes. When my family all left home, I started doing this daily post just to keep in touch. I’d talk to one but not the other and found myself repeating what I’d said. So this way I say it to all and no one gets left out.
So far this week we’ve added a couple more inches of snow each day so it is beginning to add up, but they say that by the weekend it’ll warm up a little. The sun has also managed to make an appearance a couple of days and that alone makes such a difference.
It’s mid week and although I thought I’d have to be out and about due to obligations, so far I’ve not had to go, but the possibility is still there. Meanwhile I’m prepared one way or the other.
All is good in the slow lane, staying in and keeping warm for now.

Cheese Spinach Dip from Super Bowl Sunday
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Fettuccine Alfredo Day which honors a delicious pasta dish made with fettuccine, a flat ribbon cut noodle tossed with butter, cream and melted Parmesan
Wide noodles like fettuccine are best suited to thick cream sauces while shot or hollow shapes like Rotini or Penne work best with chunky tomato based sauces.
Fettuccine Alfredo is delicious on its own or with vegetables or seafood on top.
One Pot Chicken Alfredo
3 tbsp. olive oil
1 1/4 lb. bonesless, skinless chicken breasts diced into one inch pieces
2 cloves garlic, minced
salt, pepper and garlic power to taste
14 oz. chicken broth
1 c. half and half or heavy cream
1/2 lb. fettuccine noodles, uncooked
2 c. Parmesan cheese, grated
for garnish parsley and/or bacon crumbles
Warm olive oil over medium high heat in a large skillet. Season chicken with salt, paper, and a sprinkling of garlic powder and cook until brown. About 6 minutes.
Add garlic and cook 30 seconds. Add pasta, chicken broth and half and half. Bring the mixture to a boil then cover pan and allow mixture to simmer for 15 to 20 minutes until the pasta is tender. If mixture gets too thick, add more half and half as needed.
Remove from heat and stir in Parmesan cheese. Sprinkle with parsley and bacon crumbles if desired.
Serves 4

Love the photo of such a pretty blue sky and that white white snow!
Real mail and hand written words are treasures. I have a fabric covered board where I keep all the notes, cards and letters I get through the year. I have one thank you card from a new friend in Houston on it so far. By the way....I still think it’s good manners to send thank you cards, don’t you? By years end, the board will be full. I hope. I keep the notes and art work from my grands here too. Then in early January I put them all in a zip lock bag and when we were at the ranch, I sorted through and put some in my Country Diary for 2017 and the rest I kept in the bag along with all the Christmas cards. During our morning Bible reading and prayer time, I can pull one out at random and pray especially for the one who sent it. It is hard for me to throw out a handwritten note!

I love your little home Pam! It looks very welcoming, even in the Winter. I love getting a handwritten piece of post, (that isn't a bill LOL). I don't think we write enough cards and letters these days. The internet is great for instant communication, but I do miss the days when people used to post out more letters. I don't blame you for staying in and staying warm. It looks cold! Your spinach dip looks really tasty! I love any kind of dip. I am a glutton. Your alfredo also sounds tasty. I have never had alfredo. I might have to give it a go! God bless! xoxo
I'm definitely going to have to bookmark Friend's Day for 2019! When I left Texas for Florida in the 80's ... without consciously meaning to, a co-worker and I began exchanging funny greeting cards each week ... almost seeing who could 'out-funny' the other! Oh, the anticipation! Of course, those were times before the internet. Even tho' we're friends on FB, I miss sending and receiving Debra's cards.
