Today is the Olympic Games Opening Ceremony. Millions of people around the world will tune in to with the festivities and celebrate the beginning of the world’s greatest sporting event. Over 10,000 athletes from over 200 countries compete for a coveted good medal.

While I’m not a great sports enthusiast, it is always fun to watch and of course we always hope our team wins. I will probably only catch the highlights as reported on the news.
The only TV I have here is what I stream through Netflix or Amazon Prime. I could not have Dish TV installed here due to the surrounding trees and cable is not available at all in my community. It has been an adjustment for me but it has saved me money.
I never was one to watch much TV anyway and prefer a book over a movie always. I do get the news on line so that is never a problem and I have my radio, which works without any special connection and is always free.
They are saying we’ll be getting our daily dose of snow today but it is to be warmer. We’ll be out of the deep freeze but still very wintry.
The picture above is of my Sunshine boys sporting their Ohio State sweatshirts, our home team, and I’d say they always have a winning smile! The rest of the pictures are of what few winter sport pictures I have. All involve my grandchildren.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Bagels and Lox Day. It became a popular sandwich filling in the mid 1800’s when the transcontinental railroad began shipping barrels of salted Salmon to the East Coast.
While I often eat bagels with cream cheese, I’ve never had one with lox, which is thinly sliced cured salmon. This is a sandwich which can be served for brunch, lunch or dinner.
Classic Lox Bagel
1 plain Bagel
1/4 Lox, salt cured salmon
3 oz cream cheese
1 small red onion chopped
1 dozen capers
fresh ground pepper
Cut Bagel in half and speed with cream cheese. Draper lox over bagel and top with onions and capers. Sprinkle with fresh cracked pepper and serve.

I love salmon, but haven't dared to try lox. (I'm trying to learn to say, "not yet" instead of 'never', LOL!)
Those girls on their skates are adorable. I was never any good, but growing up I adored going ice skating.
My husband would have a tough, tough time without his 24/7 television; but like you, I'm more inclined to want to read a book.
We're watching the Olympics too and enjoying the games tremendously. All that talent, skill and determination... and strength! Go Team USA!! :-)
