Life is a special occasion!
Today is Happy Heavenly Birthday to my oldest son. He has passed away but I still think about him every day.

I know the dear Lord is there with you every day.
Today is also Chop Suey Day which is a stir fry Chinese dish made with a hodgepodge of things like egg, meat and vegetables. The name comes from a Cantonese word meaning odds and ends. It is traditionally served over noodles to soak up the delicious flavors,
Some say the dish was created by Chinese immigrants after arriving in the U.S. Others insist it is traditionally Chinese. Either way Chop Suey is on many Chinese restaurant menus across the country.
To celebrate today, support your local restaurant and order some delicious chop suey! Enjoy !

This birthday is very near and dear to my heart. This son was my first baby We were married for several years before he came along and we were thinking we’d never have a child of our own.
But then I’ve learned to never say never, we just don’t know what might happen. After him I had another son and then came my daughter followed by more sons. I had a total of 7 children, 6 boys and 1 girl. I so thankful for each one of them and love each one unconditionally.
They are all grown up now and are married and have families of their own. I’m a grandma to 21 grandchildren.
My oldest son once ask me how I could possibly love so many children. I told him that there is always room for more love to spread around.
The very first Chinese food I ever had was Chop Suey. My mom would make it for us and I also made it for my children. It was very easy as it comes in a can and just needs heated up.
It was one of my favorites served on top of crunchy noodles with a side of buttered rice. I’ve always bought the chicken chop suey, but I no longer eat it because of the salt content.
It is hard to eat any convenience food due to the salt content. It is the same in restaurants, their food is often salted too.
Thankfully most of our meals are made at home. I no longer cook much but my daughter and SIL are both very good cooks.

as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them

I like to say, Chops suey’s the biggest culinary joke that one culture has ever played on another, because chop suey, if you translate into Chinese , means tsap sui which if your translate back, means odds and ends.

Oh, I've not had chop suey since leaving home in 1968! My mom used the kind out of a can, too.
I just lifted my prayers -- both for your son's family, but you as well. Never forget!
I understand - I lost my brother, and my mom and dad always remembered till the day they died. And I remember. Is that his photo in the top - he looked so happy. I am so sorry.
Not a big fan of Chop Suey myself. :)
