THOUGHT FOR TODAY
Almost anything can be improved with the addition of bacon.

It seems like we just celebrated bacon, but this is a different holiday used to also celebrate bacon. There is more than one. The other one was National Bacon Day. Bacon is a favorite all around the world.
It’s my day to cook for the weekend and on the menu is a recipe that does include bacon:
Grandpa’s German Style Pot Roast
Makes 8 servings
4 bacon strips
1lb Yukon Gold potatoes
4 medium carrots, sliced
1 can sauerkraut, rinsed and well drained
3/4 cup chopped dill pickles
1 tsp smoked paprika
1 tsp. ground allspice
1/2 tsp. salt
1 boneless beef chuck about 3 lbs.
2 packages frozen pearl onions, thawed
4 garlic cloves, minced
1/2 cup stout beer, or beef broth
1/3 cup Dusseldorf mustard
1/2 cup sour cream
1/2 cup minced fresh parsley
In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels and drain.
Meanwhile, place potatoes, carrots, sauerkraut and pickles in a slow cooker. Mix paprika, allspice, salt and pepper; rub over roast. Brown roast in drippings over medium heat. Transfer to slow cooker. Add onions and garlic to drippings, cook and stir 1 minute. Stir in beer or beef broth and mustard. Pour over meat. Crumble bacon ; add to slow cooker.
Cook, covered on low 8 hours, until meat and vegetables are tender. Remove roast; let stand 10 minutes before slicing. Strain cooking juices. Reserve vegetables and juices; skim off fat. Return reserved vegetables and cooking juices to slow cooker. Stir in sour cream; heat through . Serve with roast , sprinkle with parsley.
This a first for me, cooking sauerkraut with beef. It’s something I’ve never had before but it does sound good and since it’s a large recipe, I’ll probably be eating it most of the week. Perhaps I can put some in the freezer if I can find room. I couldn’t find pearl onions so I quartered a regular onion and put it in the pot.
It’s going to be a hot day here with temps in the high 80’s or low 90’s. They say we have some chances for rain Sunday and Monday.
It’s a 3 day holiday weekend and I had hoped we’d stay sunny, but there’s nothing much we can do about the weather, just try to enjoy each day as we can.

That recipe sounds good, REAL good.
After 4 days of sunshine, our weather's turned rainy; it's supposed to stay that way for the next 10 days. Fortunately, it doesn't affect our plans, but I feel bad for those who hoped to be outdoors.
I thought about making my usual Mississippi pot roast when we next get together with son and DIL -- but now I'm thinking this would make a good substitute. Hmmm... my mouth's watering!
That recipe sounds interesting!I too have not thought of cooking sauerkraut with beef, usually have only done it with pork. I think I'll copy it out and make it down the line. Bacon and eggs are always a great breakfast meal!
